Curried Egg Breakfast Sandwich



When I lived on Commercial Drive in Vancouver, we used to quite enjoy weekend brunch at Fets Whisky Kitchen. My favourite order was the breakfast egg sandwich named the "Woodford Handheld" which consisted of a ciabatta bun, crispy bacon, cheese, and just a hint of curry in the generous amount of scrambled eggs. As to why they called it the Woodford, I can only imagine that there might have been a little bourbon in the mix somewhere, which wouldn't be a shock from a place known for its whisk(e)y and bourbon selection. Over the years their menu has changed, and they have moved on from the Woodford. But I haven't.

Fortunately, it's a really easy thing to make, although it does take a bit of organization. The important thing is to get the amount of curry powder just right. It should be noticeable, but not jarring or interfering with the flavour of the eggs, bacon and cheese. You can opt not to toast the buns, but I think it's much nicer if you do. It's a departure from the original, but hey - why not use garlic butter while you're toasting them?

Curried Egg Breakfast Sandwich

AKA "The Woodford" (more or less)

2 Sandwiches

2 ciabatta-style buns (or equivalent), split
1 tablespoon butter, or garlic butter
4 - 6 strips of bacon, to taste
Monterey Jack, young Gouda, or melting cheese of your choice, enough to cover the bottom half of each bun

4 eggs, lightly beaten
2 tablespoons cream
pinch of coarse sea salt
1/4 teaspoon hot Indian-style curry powder

Start with the bread. Spread cut sides of the buns with butter (or garlic butter) and place butter-side down in a preheated skillet over medium heat until lightly toasted. Remove buns to serving plates, and lay the slices of cheese on the bottom pieces. The heat will cause the cheese to soften slightly, which is fine.

Wipe out any crumbs and add into the now-empty skillet the strips of bacon. Cook the bacon until slightly crispy, but not too hard, turning as needed. Prepare the eggs by beating them together with the cream, salt, and curry powder. If you plan to use a different skillet to scramble your eggs, get it preheating now.

Remove the bacon from the skillet and distribute between the two cheese-dressed buns.

Scramble the eggs as you please. I use medium high heat with a bit of butter to get it going, and stir frequently to get loose, soft curds. It only takes about a minute. When the eggs are just about to set, take a large serving spoon and serve the eggs on top of the bacon. Close the sandwiches with the toasted bun tops, and devour right away.

It was every bit as delicious as I remembered.

Z-Balls - Zucchini Polpette


These delicious veggie-packed Z-Balls can be everything from a pakora-like appy (pass the chutney), to a sandwich filling, to a stand-in for traditional meatballs on a big plate of spaghetti (or spaghetti squash, if that's how you roll).

This recipe was developed from my classic Zucchini Fritters recipe, but has a bit more body to better withstand the round(ish) shape without getting doughy. I'm using classic Italian flavours for these ones, since they'll be topping spaghetti, but you can of course customize the seasoning profile to your taste (Old Bay-type seasoning would be awesome for sandwich-filling Z-Balls, for example).

It's zucchini season! What are you waiting for?

Z-Balls (Zucchini Polpette)

Makes 24 Z-Balls
Total prep and cooking time: 45 minutes

5 cups grated zucchini
2 eggs, beaten
2 tablespoons butter, melted
1 1/2 cups fluffy breadcrumbs ~ such as panko
1/3 cup finely minced onion
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/2 teaspoon chile flakes (optional)
1/2 teaspoon kosher/coarse sea salt
1/4 cup flour
oil for shallow-frying

Make sure that the strands of grated zucchini are not too long - cut a slice into the zucchini lengthwise (stopping before you hit the stem) before grating, and then position the zucchini against the grater so that the grated strands will be short. You could also grate the zucchini normally, and then give it a quick chop-through with a knife. Either way, Squeeze the grated zucchini by the handful (over a colander in the sink, to catch escaped strands) to release extra liquid. Place the shreds in a medium mixing bowl.

Add the flour and stir with a fork to thoroughly distribute the flour throughout the zucchini strands. Add the eggs, melted butter, bread crumbs, minced onion, salt and herbs. Mix well with a fork, so that all ingredients are evenly distributed. The batter will be quite wet, so you will need a scoop to shape the balls. A disher with a release mechanism works best. The one I use a no. 18-8 disher, which has a tablespoon capacity, which makes a nice sized ball, whether it's a meatball or z-ball. Without a scoop, I would use two tablespoons, and the quenelle method.

Pour frying oil into a skillet to make about 5mm deep. Heat the oil over medium heat, and be patient until it gets hot enough to fry, about 190°C/375°F. You don't want it too hot, or the balls will burn before they cook through. Also, if you overheat the oil, it will begin to break down and smell fishy (especially canola oil), so never let it get so hot it smokes. You can test the oil by putting a strand of zucchini in the pan. If it starts to sizzle immediately, the oil is ready. If it browns immediately, remove the oil from the heat, because it's too hot. Let it cool off the heat and try again. You can also use other methods to test the oil temperature if you don't have the right kind of thermometer.

When you're ready to start frying, use the scoop/disher to shape the ball, and release it directly into the hot oil in the skillet. Add a few more balls, well spaced to avoid over-crowding the pan, and fry for a few minutes on each "side", until dark golden brown. These are pretty soft, so you may need to gently re-shape them as you turn them - tongs are the best tool for the job, but two forks works well, too. Or you could learn to love the slightly irregular, rustic shapes they form naturally, like the ones shown here.

Finished balls can be kept warm in a warm oven. Continue to cook the z-balls in batches until you've used up all the batter.

Top a bowl of pasta and tomato sauce with these crisp, flavourful nuggets for Spaghetti & Z-Balls - sure to make anyone smile from their sheer deliciousness!



Leftover Z-Balls can be reheated very nicely on an ungreased baking sheet (or pizza pan) in a hot oven (200°C/400°F) for 10-15 minutes (flip halfway through) to restore the crisp exterior. Perfect for wraps!

Turkish Breakfast, Wrapped


Full disclosure, you're probably not going to get this anywhere in Turkey. If you want an actual Turkish breakfast wrap, I'd suggest gözleme, but that's not what I've made here. This is more of an homage to the wonderful breakfasts of Turkey, but wrapped up in a flatbread. You could vary the flatbread based on what you have at hand: Dürüm would be a good (and very Turkish) choice, but I had Arabic-style thin pita bread, so that's what I used.

There's so many things that I could have used in this. Ajvar could be swapped in for the hummus, for example, and I didn't manage to sneak any peppers in, due to lack of room. Next time, it will probably be different - just because of what I have on hand in the kitchen. And there WILL be a next time, oh yes. Because this was delicious.

Turkish Breakfast, Wrapped

Serves 2

2 large flatbreads, (ideally, warmed enough to be pliable)
2 heaping tablespoons hummus
166 grams sucuk sausage (I like the spicy garlic one), peeled and sliced
1 medium pickled cucumber, julienned
2-3 eggs, lightly beaten
30 grams feta
1 large roma tomato, deseeded & chopped
6 cm long english cucumber, deseeded and chopped
1/2 cup chopped parsley
1 thick slice of red onion, minced
1 tablespoon lemon juice
pinch kosher salt
pinch Isot (aka Urfa) chile flakes or Sumac (optional)*
1 tablespoon olive oil, divided
2-3 tablespoons tahini dressing
1 tablespoon hot sauce (I used green zhug)

First things first: I already had the tahini dressing and the hummus leftover from the day before, but if you need to make them, do that first. Next, I made the chopped vegetable salad by combining the tomato, cucumber, parsley, red onion, lemon juice, 1/2 the olive oil, and chile flakes. Stir well. Set aside.

Julienne the pickle.

Peel and slice the sucuk, and fry gently in a skillet until they darken and get a little bit crispy of each side.

Lay the flatbreads on plates, and smear the hummus over half of each flatbread. Lay the fried sucuk on top of the hummus, and top that with the pickles.


In a small skillet, heat the remaining olive oil and add the beaten eggs. Stir briefly, and crumble the feta into the pan. Stir again until soft curds form, and then divide the egg mixture between the flatbreads.

Add a big spoonful of the chopped salad to each bread, and then drizzle the tahini over the egg mixture. Finish with a smear (or a more generous amount) of the hot sauce, and then prepare to eat.

By prepare to eat, I mean, take it to the table, have napkins on hand, and the beverage of your choice standing by. Once you roll this bad boy up and start eating, you're probably not going to want to put it down before you're finished. It will probably be a bit messy.

Once you're ready, roll up the flatbread into a bulky wrap shape, pinching one end closed with one hand while you raise it up to take your first bite. Some juggling may be required, depending on how friable your flatbread is, but it will soon be in your mouth, and you probably just won't care about a bit of escaped juices - which, of course, you can lick off of your fingers.

* Isot (or Urfa) pepper is a dark, not-too-spicy condiment that often takes the form of oiled pepper flakes. You could substitute ancho powder for this - the flavour is different, but in the same "spicy raisin" family.

** Sumac is an earthy, lemony, mild seasoning.

Chicken Parmigiana


Chicken Parmigiana is a bit of a process, but it doesn't have to be an ordeal to make at home. Moreover, there's one truly excellent reason to do so: leftover chicken parmigiana makes simply amazing sandwiches.

It helps lighten the workload if you have some good homemade basic tomato sauce on hand (I like to keep some in the freezer), but you could use a purchased one. The chicken itself is shallow-fried rather than deep fried (you could also bake them), and the cooking time is actually pretty quick. You might want to have your side dishes already to go when you lay the chicken in the pan, because the cooking time is mostly active and it can be challenging to do tend to two items that are highly active at the same time. Fortunately for me, my chosen side dish of spaghetti aglio e olio wasn't time or labour intensive (and the mise en place was done in advance), which minimized the juggling.

Restaurant versions of chicken parmigiana often are a bit light on the parmesan cheese, and for extra gooey-ness include a lot of mozzarella. Now, I like mozzarella just fine, but I didn't want its rich presence to overshadow the parmesan itself, so I simply went to town with a lot of parmesan before it went into the oven, and a renewed layer of freshly grated parmesan when it came out.

It's always important to maintain good kitchen hygiene when working with raw chicken, so I lay out the breading bowls in a straight line, to ensure I'm not going back and forth.

Chicken Parmigiana

Makes 4 cutlets

2 large boneless, skinless chicken breasts
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon ground white pepper
1 egg, beaten
2 cups coarse, dry breadcrumbs, such as panko

1 cup basic tomato sauce

1 cup freshly grated/shredded parmesan

canola oil - enough to cover the bottom of a large skillet about a centimetre deep

Before you start with the chicken, get your pan ready with the oil - you'll want it heated to about 180-190°C (350-375°F) if you have the ability to control/set the temperature. Otherwise, set it over medium heat for now. Turn the oven on to preheat to 200°C (400°F) with the rack in the middle of the oven. Place the tomato sauce in a small skillet or saucepan to warm up.

Using a sharp knife, slice each chicken breast horizontally into two thin cutlets. With a mallet or other meat-flattening device, gently pound the cutlets until they are about a quarter bigger than they were, and the meat is as even as you can make it. Move your four cutlets to the start of your breading line (be sure to have a clean plate and the end of the line, to hold the breaded cutlets).

Mix the flour with the salt and pepper (you can add a pinch or two of dried basil or oregano if you like) in a wide, shallow bowl wide enough to fit the flattened cutlet. In the next bowl, place the beaten egg. In the final bowl, the breadcrumbs.
Without hurrying, dip the first cutlet into the flour mixture to thoroughly coat it on all sides, and give it a good shake to remove any excess flour back into the bowl. Then, dip the floured cutlet into the egg, again, coating it thoroughly, and letting any excess drip back into the bowl. Next, lay the cutlet in the breadcrumbs, and press it down firmly so the breadcrumbs really stick to it. Turn it over and press again. Lift gently (no need to shake this time) and lay it on the receiving plate at the end of the line. Repeat until all four cutlets are breaded.

When your oil is ready (it may already be ready - test it by sticking a wooden skewer or raw spaghetti strand in, and if it bubbles immediately it's good to go), lay the first two cutlets side by side in the pan (I use tongs to gently lay them in the pan). While they fry, place a metal baking/cooling rack on a sheet pan and have it standing by to receive the fried cutlets. When the bottom side is golden brown, use the tongs to flip the cutlets over to the other side. It doesn't take longer than a couple of minutes, because the cutlets are so thin, so pay attention to them. When the first two are done, remove them to your rack-on-the-baking sheet, and start frying the remaining two cutlets the same as the first. While they are frying, grate your parmesan.

When the second pair of cutlets have finished frying and have joined the first pair on the rack, spoon a little of the tomato sauce onto each cutlet, spreading it to cover the top surface (you might have some sauce leftover). Next, add a hearty layer of grated parmesan on top of the tomato sauce, and then transfer the whole rack & sheet to the oven for a few minutes until the parmesan is melted and the dish comes together as a glorious whole. Remove the rack from the oven, add a fresh layer of parmesan, and serve immediately.



But wait...I mentioned sandwiches, right?



So, if you planned to have some cutlets leftover, leave them on the rack to cool completely, and then transfer to an airtight container in the fridge. When you are ready to turn them into sandwiches, take them out of the fridge and place them in a dry skillet over medium heat for a few minutes, to take the chill off of them. Then, they are ready to slide into a lightly buttered bun (you don't need other condiments, although if a few fresh basil leaves happen to mysteriously fall into the sandwich it wouldn't end the world). Slice each bun in half, and serve - or wrap well in greaseproof paper for a picnic.

You could of course use other bread, but I find a nice, fresh bun has the sturdiness to cope with such an imposing filling. It also means that the cutlet will just slightly overhang the bun, which is an ideal ratio of bread for this kind of sandwich.

Chicken Salad with Feta & Mint


The combination of yoghurt, feta and mint give a bit of Persian flare to this salad, and make it so fresh tasting. You can use leftover roasted chicken if you like, but I like to make this with chicken breast that has been steeped or gently poached in chicken broth (or stock) for the juiciest, most tender chicken salad imaginable.

It's important to use a yoghurt whose flavour you like. If you choose a very sour yoghurt, that will be reflected in the finished salad. If you think your yoghurt might be a bit too sour, you can always cut it half-and-half with a mayonnaise or crème fraîche, to soften the flavour - although that will of course make for a richer salad overall.

Chicken Salad with Feta & Mint

Makes about 2 cups

225 grams cooked chicken breast
50 grams plain feta cheese (not marinated)
3 tablespoons finely chopped fresh mint
1/4 cup julienned de-seeded cucumber
1/4 cup plain Mediterranean-style thick yoghurt
1/4 teaspoon ground white pepper
Salt to taste, if necessary
Ground sumac to finish (optional)

If you are freshly cooking the chicken just for this recipe, set it aside to cool while you prepare the other ingredients.

Finely dice the chicken breast and heap it into a mixing bowl. Crumble the feta over the chicken.

Cut a 5-6 cm piece of cucumber, and slice it into quarters, lengthwise (if it is a thick-skinned cucumber, peel it). Slice away the seeds from each quarter, and then finely julienne the remaining cucumber flesh (you don't want the pieces too long - very short lengths work best. I usually eat the seeds while I'm doing this, because they're tasty, but they are too wet to leave in the finished dish. Blot the sliced cucumber pieces dry with a bit of clean kitchen towel, and add them to the bowl with the chicken and feta. Sprinkle the white pepper over the chicken mixture, and use a fork to thoroughly stir everything together.

Add the yoghurt and the chopped mint, and stir through. Taste, to see if it needs salt (if your feta is very salty, it probably won't, but if it's milder, it might). Cover tightly and refrigerate for an hour or so to give the flavours a chance to meld. Use as a sandwich filling, or simply scoop it onto some greens for a light meal.

If you happen to have some ground sumac, sprinkle a bit lightly over the filling before closing up the sandwich. The lemony-earthy note of the sumac complements the other flavours very nicely.



While it works very nicely in a traditional two-slices-of-bread sandwich, it is also excellent as a wrap filling (I've used both tortillas and lavash to great success), or stuffed into a pita. As you can see, I fill my sandwiches quite generously, using about a cup of salad per sandwich, but if you are doing flatbread roll-ups to accompany a soup, you might want to make them a little smaller.



This salad keeps well overnight in the fridge, but you probably don't want to leave it longer than that, or the enzymes in the cucumber will start to break down the yoghurt, making it watery.

Freezer Burritos (and website news)


Well, it looks like my older website for Always In The Kitchen has finally expired and been taken offline. Don't worry, this blog is still active, and I still have all of the recipes, so I'll begin adding them to the comments sections of various blog posts that formerly just contained the links.

In the meantime, if you find any dead links where the recipe has not yet been added into the comments at the bottom, please let me know. I plan to add all of them, but it could take a while, and any of the older recipes that didn't have a link on the blog will be getting a whole new blog post, like this one.

Freezer Burritos

These are a delicious make-ahead worthy of taking up space in your freezer, ready to be a tasty packed lunch or emergency dinner. The inclusion of rice makes them technically "Mission-style" but, as discussed below, these are highly customizable.

Total prep and cooking time: 45 minutes more or less, depending on how fast you are at filling and rolling.

1 cup (200 grams) uncooked rice
1 (425 gram) can* black beans
1 (525 gram) can* pinto or kidney beans
1 cup (250 mL) frozen corn kernels, rinsed in warm water, drained
1 cup (250 mL) jarred salsa
10 (12 inch) flour tortillas (make sure they’re flexible - warm them if necessary to make rolling easier)
250 grams Pepper Jack cheese, shredded (or cheddar)
2 tablespoons Tabasco sauce, or hot sauce of your choice
1 tablespoon ground chile powder
1 teaspoon ground cumin
1 teaspoon dried oregano leaves
1 cup chopped fresh cilantro (use parsley or green onions if you're cilantro-phobic)
1-2 minced jalapeño peppers

*Please note that the can-sizes are approximate, based on what was available in my area at the time this recipe was being developed. If your cans are a bit smaller or a bit larger, it will be fine.

Cook the rice in your usual fashion, adding some Mexican or Southwest Seasoning or extra chile powder (1 teaspoon, approximately) into the water. Allow to cool somewhat while you prepare the rest. Drain and rinse beans and corn. Add salsa, and toss to mix. Transfer to a large bowl, and mix in the rice and cheese and seasonings (spices, cilantro, and peppers). Mix very thoroughly. Taste and see if you need to add more spices or hot sauce. Divide the mixture evenly among the tortillas, and roll up. Wrap individually in plastic wrap, place into a large freezer bag, and freeze. Reheat covered, but unwrapped, in the microwave on high for about 3 minutes. Liberally apply extra hot sauce, such as Cholula (ie. a thicker sauce, rather than a thin one like Tabasco or Louisiana).

I usually plan to have these for dinner on the day that I make a batch. Instead of microwaving them, I spritz them lightly with canola oil and bake them on a cookie sheet, in a 400 F oven, or until the edges are crispy and golden. You can also pan-fry them in a bit of canola or peanut oil, using tongs to rotate them for even browning.

For a non-vegetarian version, substitute one of the cans of beans with ½ pound cooked ground beef (season well, and drain off any fat) or ground chicken or turkey for a leaner meaty version. It’s slightly more work, but very tasty.

I usually get 10 (sometimes more) burritos, depending on how big the tortillas are, how much I've tinkered with the filling, and how much of the filling I've eaten while rolling up the burritos.

These are of course highly customizable - just keep an eye on the volume of filling you're making. I've been known to add minced bell pepper, Mexican pickled onions (chopped), leftover mole sauce, leftover roast chicken, (I divide the shredded roast chicken between each burrito rather than mixing it into the filling). Leftover pulled pork would of course also work very nicely. I'm thinking right now that black bean and roasted butternut squash would be an excellent plant-based variation.

Smoked Tuna Melt


Tuna Melts show up on a lot of people's comfort food lists. They are a cultural phenomenon that I grew up hearing about, but not eating. My mother didn't buy canned fish (for a variety of reasons, including worries about mercury content), and the fresh fish that we had occasionally was never tuna. Plus, I couldn't really eat fish when I was a kid, so it wasn't served very often. But I heard people talking about them rather a lot. My classmates often had tunafish sandwiches (as an aside, I never understood why these sandwiches were always described as tunafish, rather than just tuna. Is there any non-fish kind of tuna?), which they evidently enjoyed a great deal.

So now that I can eat fish, all these years later, when I find myself in possession of a can of fish, I think about these classic dishes that are comfort food for so many people, but outside of my realm of experience. Today's can of smoked albacore tuna (like the hot-smoked salmon from my recent Kedgeree post) came as part of a care package of local products from my family on the west coast of Canada.

Tuna Melts evoke strong opinions on such points as amount and type of mayonnaise, presence of pickles in or on the sandwich, shredded or not shredded cheese, open- or closed-face, tomato or no tomato. I decided to go open face (to be eaten with cutlery), with tomato but no pickles (mostly because I was out of pickles, to be honest - add some if you like). These sandwiches are very substantial, and one piece would have been completely sufficient for each of us. We were both in a bit of a food coma after eating these.

Smoked Tuna Melt

Makes 4

4 slices bakery bread
4 slices tomato
4 bread-covering slices of cheese (or equivalent shredded)
Fresh ground black pepper
Smoked paprika

Filling
170 grams boneless smoked tuna, drained
1/4 cup mayonnaise (I use Hellmann's)
1 celery stalk
1 green onion
1/4 cup shredded Gouda or Edam or Jack cheese
splash Worcestershire sauce
splash Tabasco sauce
zest of half a lemon
juice of half a lemon
black pepper

Preheat your broiler.

In a medium mixing bowl, slice the celery stalk into quarters lengthwise, and finely chop. Finely slice the green onion, including the dark green part. Flake the tuna on top of the vegetables, and add the rest of the filling ingredients. Stir well with a fork until nicely combined. Taste, and add salt if you think it needs it (mine didn't, but it will depend on both your choice of mayonnaise and the tuna itself).

Toast the bread lightly in a toaster (or under the broiler, as you like). Lay out the toast slices on a baking sheet or pizza pan. Divide the filling mixture between the slices, spreading evenly to the edges. Add a generous amount of black pepper. Top with the sliced cheese, or some of the shredded, if you're going that route. Top with a tomato slice in the centre of each piece, and a final layer of cheese on top of the tomato. Sprinkle with a restrained amount of smoked paprika (not shown).



Broil until cheese is bubbling. Serve with potato chips (for tradition's sake), and a green salad, for balance.

Grilled Cheddar & Mango Chutney Sandwich



It is my understanding that every food blogger must at some point commit a post to a cheese sandwich. This is one of my favourites.

Okay, okay, it's not really grilled, it's panfried in a skillet. We called these "toasted cheese sandwiches" when I was a kid. You could absolutely grill it, though.

In my mind, I invented this recipe, a natural outgrowth of my favourite childhood cheddar-and-pickle relish (non-grilled) sandwiches, but honestly I was not at all surprised to discover that plenty of other people had already invented it. It's a winning combination and, if not original, utterly delicious and well deserving of widespread enjoyment.

You make it exactly as you think you do:

Grilled Cheddar & Mango Chutney Sandwich

2 slices sandwich-type bread
Sufficient aged cheddar cheese to cover at least one of the bread slices
Sufficient mango chutney (I prefer the spicy version) to cover (thinly) one of the bread slices
butter

You may wish to finely chop any extra-large pieces of mango in your chutney, for ease of eating.

Assemble the sandwich exactly how you'd expect by spreading one of the slices of bread with chutney, covering the chutney with cheese, covering the cheese with the other slice of bread. Butter the outside slices of bread, and fry the sandwich over medium-high heat until golden, then (carefully) flip and repeat.

Serve with soup. Again from my childhood, a Simple Tomato Soup (recipe in the comments below) is a clear winner. But might I also suggest a Mulligatawny, or Brown Lentil & Tomato Soup?

Cucumber Tea Sandwiches with Chile-Basil Butter


These darling little sandwiches were inspired by Madhur Jaffrey's Indian-accented tea sandwiches, which call for chile-mint butter, and don't contain cucumber. I was tempted to add a hint of ground coriander and cumin to the butter mixture, just to elevate the sense of Indian flavours, and I might do that next time. Hers also had a touch of lemon juice in the butter mixture, which I might try as well, as I think the added brightness will work nicely.

Cucumber Tea Sandwiches with Chile-Basil Butter

Makes 8 Tea-sized Sandwiches

4 larges slices of thinly sliced soft white bakery bread
2-3 inches finely sliced cucumber
3 tablespoons soft butter
2 tablespoons minced basil
1 minced green chile
Kosher salt
Black pepper to taste

Mix the butter, basil, green chile, and a pinch of salt (along with any bonus seasonings you'd like to add) until thoroughly combined. Spread the butter mixture thickly on one side of each piece of bread.

On two of the slices of buttered bread, layer as many pieces of cucumber, overlapping, as you can fit onto the bread. Don't worry about peeling the cucumber (unless it has an inedible peel), the dark green adds a nice bit of contrast. Top the cucumber'd bread slices with the other buttered slices of bread, to make two large sandwiches.

Trim the crusts, using a very sharp knife and a single downward slicing motion for each side, to prevent the sandwiches from trying to fall apart. Slice each sandwich into quarters, in whichever way you see fit, or use a sandwich punch or cookie cutters if you want fancy shapes.

Serve right away, so that the bread doesn't have a chance to dry out. If necessary, cover tightly with plastic wrap until ready to serve.

Heart & Blade Burgers



These were intensely, astoundingly, beefy. I got the idea from Jennifer McLagan's book "Odd Bits" where she exhorts the reader to make burgers entirely of heart, but for my inaugural attempt at cooking beef heart I decided to go with her further suggestion of cutting the heart 50/50 with non-organ muscle meat. She suggested brisket, but, based on the availability of the day, I went with bottom blade. For four patties, I used 250 grams trimmed heart, and 250 grams bottom blade, making each patty roughly a quarter pound.

I do not have a meat grinder, which is the only reason that it took me this long to make these. However, I cribbed from Alton Brown's instructions for making ground meat using a food processor, and that worked incredibly well:

Heart & Blade Burger Patties

Prepare the beef heart by trimming any muscle sheath, silverskin, tendons, or veins that may be clinging to the outside. Using a chef's knife, dice the meat into short, thick strips about 5 centimetres long. Next, trim and dice the blade meat into the same sized pieces.

Place the meat in a metal pan in the freezer for about 20 minutes, so that the meat begins to freeze and stiffens, but is still somewhat pliable.

Scrape the meat off of the pan into a food processor fitted with a metal blade, about 250 grams at a time - you don't want to overload the machine. Pulse the processor's blade repeatedly until the mixture begins to look like ground beef. Empty the processor, and repeat until all of the meat is chopped.

At that point, I put all of the meat together in the processor, added a tiny dribble of olive oil, and gave it another few pulses, simply to integrate it into a single mass and make sure there was enough fat to keep the meat from drying out.

Remove the metal blade and season to taste. We wanted to go with simple, almost stark burgers, so that we could really taste the meat. We used only a good pinch of kosher salt, but you could season these any way that you like to season your burgers.

Next I turned all of the meat out onto the counter, and shaped the mass of fluffy meat into four patties, which we fried over medium-high heat in a little butter (you could also use olive oil, of course). I worried that the patties might not hold together nicely, but they did. I was struck by how dark a red they were - lots of iron, for sure. These patties are quite lean, because heart meat is inherently lean. I patted them out quite thinly, because I wanted good bun coverage, but a thicker patty would work fine, too. If you're making them very thick, you might want to poke a hole through the centre to speed up and even out the cooking process, but that's up to you.

Now, I won't lie to you: there is a faint trace of gaminess, of "organ meat flavour" that one gets from the heart, but it is quite mild compared to, say, liver or kidney, and the overall effect is so overwhelmingly meaty tasting that the general impression that you get when biting into your burger is simply that of beef (and rightly so). I suspect that the all-heart burgers would be a little gamier, which would certainly be fine with me, but these were a wonderful introduction into cooking beef heart. Piled up onto a bun with all of the fixings (not pictured, sadly, because we fell on the finished burgers ravenously, and I forgot to take pictures), it made a delicious dinner.

So, what's next? All-heart burgers? Heart Loaf? "Heart"y Meatballs? There seem to be an awful lot of options, and I'm looking forward to further experimentation.

Gigantes & Briam Burgers



This is really more of a serving suggestion than a recipe, per se.

Remember the Briam that I enthused about last summer? Well, I started with the notion that I would make a veggie burger, using ground chickpeas in a sort of falafel-inspired patty, but when I realized that I also had leftover Gigantes, I thought I'd make the patties with those, instead.

The Gigantes are rather soft, so, in the absence of any aggressive thickener, such as chickpea flour (and with the vague notion of keeping the patty gluten-free, although the bun pictured here is not), once I mashed the beans up, the resultant patties were very soft, almost bordering more on hummus than on falafel. However, they were delicious, and they added a nice hit of protein to this sandwich to make it more satisfying to eat, and of course to add staying power. You could, of course, replace the bean patties with any patty-like interior that you like - keeping the Greek theme, ground lamb would be fantastic.

The Briam is also fairly soft, but retains enough texture to keep the pieces (mostly) in the bun, and so that you get at least some textural experience from the specific vegetables as you bite your way through the sandwich. This particular batch of Briam was a bit more eggplant-intensive than my usual, so the softness is an asset (leathery eggplant doesn't make good sandwiches, oddly enough). I highly recommend toasting the bun, not only for flavour, but to add much needed structure to the whole enterprise.

Because the patty was so soft that it practically became a spread on the bun, and because of the generous amount of olive oil already in the Briam, no other spreads or dressings were needed for this sandwich. I added some slices of feta to the bottom half, simply because I had it available, and the sharp, salty taste contrasted nicely with the mellow vegetables.

It's always good to make more Briam than you need; it keeps well for a few days, is delicious hot or cold, and can be pressed into service as a side dish, condiment, or sandwich filling/garnish at will. Next time I have some leftover, I'll definitely be thinking about this sandwich, and scheming to build an even better Gigantes patty, or perhaps a nice, crispy flat disc of falafel.

Spanish Pork Burgers


This was really, really good.

I'd made the Spanish Pork Burger recipe from Eating Well Magazine once before - well, once as burgers, and once as meatloaf, and I liked it. Finally having made it with pimentón de la vera (smoked paprika), and having vastly improved my burger seasoning skills, I absolutely love it.

What else did I do differently? Quite a few things, actually.

This time, I also used a smaller bun, a potato bun from my local supermarket's in-house bakery. It had a very, very slight sweetness to it that complemented the earthy lemon saffron mayonnaise (which sadly, is not visible in the picture, but is a delightful, vivid yellow), and the smokiness of the paprika. The lower bun-to burger patty ratio is generally more satisfying, I think. I didn't use Manchego cheese, this time, I simply used a nutty mozzarella that needed using up, and it was fine, if ever so slightly less Spanish. I didn't grate it, but simply laid it onto the pork patties in the grill pan.

That brings up another thing - the grill pan. This is definitely the right pan for the job - you get the slight char on the striped bits, without blackening the entire surface of the burger. It is infinitely more attractive, but also has a positive effect on the texture and flavour of the meat.


I also used the Piquillo peppers recommended in the recipe as opposed to regular roasted red peppers. I liked the firm texture and the flavour. I used them as a bottom layer between the mayonnaise and the pork patty, topped the pork with the cheese and then the sauteed onions, and then the toasted top bun. No other toppings were needed or wanted - they could be safely relegated to a salad on the side, and consumed leisurely after the burgers were devoured.

And devoured they were. I can hardly wait to have them again.

A Brief Journey in Short Ribs

Spring is coming on fast, but there are still a few chilly days left that lend themselves to beefy braises and slow stews; just time to get in one more short rib dinner. Or three.


I kept it simple, to start. Rubbed the meat with a little kosher salt and olive oil, browned it well in a Dutch oven, deglazed with a cheap and cheerful Chilean carménère (Éstacion, $12, surprisingly drinkable), added a 400 ml tin of plain diced tomatoes with their juices and a half-cup of chicken stock. For seasoning, a sprig each of rosemary and thyme from the garden, 3 bay leaves, a few cloves of garlic (quartered lengthwise), and a dash of allspice. Once the dish was at a simmer, I put it in the oven, covered, at 300℉ for three hours. The last half-hour of waiting was pure agony, but the wait was worth it. Rich, meltingly tender, and with a deep, wonderful beefy flavour. Baked potato (since the oven was on anyway) and coleslaw rounded out the meal.I made extra, not that we'd have had the room for larger servings. No, the extra was for conversion purposes. I figure that any time I am waiting three hours for something to come out of the oven, I'm making it count. So, I cooked double the amount that we needed, and stored the leftovers in the braising liquid in the fridge.

The added bonus of advance preparation and chilling is that all of the lovely suet comes up to the surface, and an be quite easily lifted off (to feed the birds, or save for some other purpose), leaving a lean gel of braising liquid surrounding the still-on-the-bone meat.

So, what to do with the leftovers? Sandwiches, of course! I warmed up the meat and shredded it with a couple of forks (pulled pork style), and put it on toasted buns with a few pieces of the tomatoes from the braising liquid, topped the whole thing with a layer of edam cheese, and served with a spinach salad for super-fast dinner.


Since there was still a little shredded meat leftover that I couldn't cram onto the buns, and the rest of the braising liquid, I used the liquid as a base for a soup, adding a little extra broth, some carrot coins, corn, lima beans(!), and barley. At the end, the shredded meat went back into the pot to warm up. Embarassingly easy, and very delicious with a big hunk of bread to mop up the last bits.

Bring on spring. I'm feeling fortified.

Breakfast & the New Year

I don't really make New Year's resolutions, except for the amusing, off-the-cuff kind uttered for entertainment value only. I have long believed that one should implement any improvements that are needed as soon as possible, and not wait for essentially arbitrary milestones.

That said, in the spirit of fresh starts (now that I am once again able to post photographs!) I do hope that my posts here will be a little more frequent in the coming year than they have been and the end of the last.

Also in the spirit of fresh starts, I cannot recommend the meal of breakfast highly enough. Despite my enthusiasm for breakfast, I will confess to having rather recently choked down a few fast-food breakfast sandwiches of the biscuit-y variety, and I probably don't need to tell you that these occasions were met with a flinchy "I can do better than this." So, in fact, I have.

The biscuit here is a cheddar biscuit based on the lovely cream biscuits recipe from Cook's Illustrated's Fall Entertaining issue, made in my kitchen by my friend Lisa, who is somewhat new to the biscuit-making ranks, although a solid cook in her own right. It was she who came up with the idea of prepping a bunch of acceptable biscuits for breakfasts-on-the-go, and we took some time recently to play with the dough a little.

The rest of the ingredients are pretty much self-evident: a little back bacon (easily fried up and stored in a container in the fridge or freezer, depending on how frequently one wants to slap together a breakfast); an egg quickly-fried in a ring - in this case, a tuna can with the top and bottom cut out and pressed smooth; a slice of good, sharp cheddar - coincidentally, the same cheese as the one grated into the biscuit. Alternate versions saw instead a scrambled egg that had been pepped up with a little granulated onion and garlic, which was also a hit (and possibly even faster on the stove top).

Need I tell you how scrumptious it was, and how desperately I am in need of making these again?

Summer Lunch


Sometimes, it's too hot to cook. You know you should eat someting, and you're vaguely hungry, but it just seems like too much effort to bother with, when you'd really rather lie around fanning yourself and drinking mint juleps.

Sometimes, you don't want anything with more wattage than a toaster heating up your already humid kitchen. Sometimes, when tomatoes are ripe, all you really need for lunch is a fine old-style open-faced toasted sandwich, or overgrown bruschetta. Aaaannnnd if you also happen to have little bottles of basil oil and red pepper oil (Italian style), and a couple of plump balls of bocconcini lurking in the fridge, you can make yourself a pretty snazzy little lunch, without roasting the entire house.

Lamburgers

I like lamb. I've gone from a childhood virtually free of lamb, on to become someone who cooks lamb at least once each month. As I cooked lamb last Sunday, for the Taste Canada event, I'm actually having lamb twice in two weeks - an astonishing increase!

One particularly easy and inexpensive lamb dish is the lamburger. Lamb takes to a variety of spices very well, and I often tend toward middle eastern or mediterranean flavours to spruce up the bugers. The usual salt and pepper is supplemented with pomegranate molasses, cumin, mint, and sumac, or mint, oregano, garlic and parsley. I use one of those indoor "grilling" devices, which has sloped channels to collect away the grease - a blessing with a fattier meat, like lamb - and perfect for a hot summer's day when you really don't feel like heating up the kitchen any more than you have to.



Of course, in my case, the kitchen was already hot, because I got the bright idea of making rosemary buns out of my pizza dough recipe, since I couldn't quite face the price tag of the only tolerable commercial hamburger buns that I could find.

I've used the same basic dough recipe to good effect as foccacia, making hamburger buns seemed a no-brainer. I remembered to keep the dough soft (not add too much flour) so that the buns wouldn't rise straight up and give me tall, narrow buns. It worked quite well. One recipe of pizza dough yields four generous-sized hamburger buns, and the texture and flavour beat the daylights out of most commercial efforts.

Since I suffer somewhat from a fear-of-frying, or at least of deep-frying, and the household protests the frozen variety, I seldom make french fries at home. Instead, I like to use fresh summer salads to accompany my burger dinners. Coleslaw, lentil salad, and one of my favourites, couscous salad.

Couscous salad is basically a tabbouleh like salad full of tiny chopped red onion, cucumber, tomato, fresh parsley and mint, lemon juice, olive oil, and a heavy hand with the black pepper. Instead of using bulgar wheat, I use couscous, which I steam up with lemon juice to give an extra zip to the salad. The overall texture is softer than a tabbouleh, but tends not to run as soggy (especially if you remove the seeds from the cucumber and tomato).



It makes a terrific, light side dish, and doesn't heat up the kitchen. Plus, it packs well for lunches, so I make lots, and devour the overage over the next couple of days. A sprinkle of sumac over it gives a fantastic, floral yet woodsy flavour.

I also have taken to using tzatziki sauce as my primary condiment on lamburgers. A little mustard is nice, too, but a slightly garlicky, creamy tzatziki is a perfect accompaniment to a lamb patty. It is also significantly lower in fat than mayonnaise or hamburger sauces, so that pleases me, too - but mostly I like the taste.

It occurred to me tonight, as I tidied up the very few dishes required to make dinner, that I have yet to try an Indian treatment on my lamburgers. Immediately, this conjured notions of lamb patties spiced with kashmiri pepper, garam masala, and cumin, and instead of the tzatziki (although it is perilously close to a raita, as it is) a fruit chutney - mango, or perhaps tamarind. A banana and yogurt salad on the side, or shredded carrots with lime juice and hot chilies - this could be a fantastic meal. The bun, of course, requires some choices. I'm unlikely to make naan at the drop of a hat, but I could see a version of the rosemary buns made instead with dried fenugreek leaves (happily, on hand in the spice box already).

I may have to have this for dinner next Sunday. After all, I have to report back, right?
