Poulet Basquaise: Basque Chicken
This recipe takes a bit of time, but it's absolutely worth it, and about half of the total prep time is hands-off cooking.
It is more of an interpretation than a 100% authentic recipe, using the same techniques and ingredients, although it is reimagined into a one-dish meal as opposed to the traditional Basque progression, which has the beans as a separate dish before the main course. It's in fact a fusion between several recipes for Basque style chicken and also a rabbit recipe. Its defining ingredient that I'm hinging the title upon is Piment d'Espelette, a specialty ground red pepper from the town of Espelette. Perhaps it should more correctly be called Poulet à la Piment d'Espelette.
I had fresh tomatoes and peppers to use up, so I went hard-core with roasting and peeling the peppers, and blanching and peeling the tomatoes, but there's no reason you couldn't use tinned tomatoes (small dice, if you can get them, or regular dice but chopped up a bit more), and jarred roasted red peppers that have already been peeled (and possibly seeded, depending on brand). I am using canned butter beans (any large white bean will do), but of course one could cook those separately from scratch, too.
The chicken braises in the flavourful liquid and becomes incredibly tender and luscious, adding its own fat and juices into the sauce as it cooks. Pushing bread into that rich sauce is one of the great joys of this dish.
Poulet Basquaise
Serves 3 - 4
3 chicken legs, separated into thighs and drumsticks
2 tablespoons olive oil
1/2 teaspoon kosher or coarse salt
1/2 teaspoon ground white pepper
1 tablespoon flour
1 1/2 teaspoons piment d'espelette
200 grams chorizo (4 links small tapas-style chorizo)
1 yellow onion, finely chopped
1 celery stalk, finely chopped
2 red bell peppers, roasted and peeled, deseeded and chopped
200 grams fresh tomato (eg. 7 Campari tomatoes) peeled, deseeded and chopped (with juices)
3 garlic cloves, pressed or minced
2 bay leaves
225 grams butter beans (eg. 400 gram can, drained, 1 1/2 cups)
250ml dry white wine
250ml chicken stock
Heat a large skillet or braising pan (I use one that is 30cm/12"), slowly, over low heat while you prepare your mise en place: Peel, deseed and chop the tomatoes, collecting as much juice as possible in the bowl, OR use about a cup of diced tomatoes with juices. Set aside. Blacken the red bed peppers all over (over a flame, under a broiler, on a grill, or on a rack over a conventional burner), and then peel, remove the seeds, and chop into large dice, OR use two whole jarred large roasted red peppers, drained, rinsed, patted dry, deseeded and chopped. Set aside. Finely dice the onion and the celery, and set aside (together is fine). Slice the chorizo. Drain and rinse the beans. Measure the dry white wine and the chicken stock. Press or mince the garlic. Measure out the remaining ingredients. Finally, clean and trim the chicken legs and separate them into thighs and drumsticks. Season the chicken with salt and white pepper.
Preheat the oven to 165°C/325°F with a rack in the middle or upper middle slot, and turn the heat up under your skillet to medium.
When the pan is hot, add the olive oil and tilt the pan so that the oil covers the bottom. Give the oil about 15 seconds to heat, and add the seasoned chicken pieces, skin side down, and let them cook without disturbing for about 8 minutes or until golden brown. Flip pieces over (I use tongs) and cook a further 5 minutes. You may need to do this in two batches, if the thighs are particularly large (or if you're using all thighs). After the 5 minutes, remove the chicken pieces to a clean plate. It won't be cooked through yet, so handle according to safe chicken-handling procedures. Add the flour and stir through with a spatula or wooden spoon, dissolving it into the fat and scraping up any dark bits from the chicken-frying stage. Add chorizo and bay leaves to the pan, and sauté lightly for a minute or two until the chorizo colours just slightly, then add the onions, garlic, and celery and sauté lightly for about 3 minutes, or until the onion is translucent and the celery has started to soften. Add the bell peppers and tomatoes and cook for 3 minutes or so, until integrated, then add the beans and stir gently through. Add the wine and the stock and stir again, and then add the chicken pieces on top, arranging them skin-side up in a single layer in the pan. Be sure to include any juices that accumulated on the chicken-holding plate - just pour them in, no need to stir again. Place the fully assembled pan in the oven, and bake uncovered at 165°C/325°F for 1.25 hours.
Spoon a piece of chicken (or two) into a wide, shallow bowl, and serve with plenty of crusty bread, a crisp salad, and the rest of the bottle of wine.
If you're lucky enough to have leftovers, it reheats beautifully.

Chicken-Bacon-Jalapeño Popper Pasta
Whew, that's a mouthful! Really, it's just an extra fancy macaroni and cheese, because adding chicken, bacon, and peppers to tasty basic recipes is almost always a good idea. Best of all, the leftovers heat up beautifully for an indulgent lunch.
This recipe doesn't use actual jalapeño poppers, but it does use all the ingredients for them. Much easier than deep frying though! You can use any small pasta shape - elbow macaroni, mini bow-ties, mini penne (pictured), or small shells, but don't use the really tiny ones, such as stars or alphabets, as they need to be able to stand up to the chicken chunks.
Chicken-Bacon-Jalapeño Popper Pasta
Serves 4
15 grams (1 tablespoon) butter
300 grams (10 oz) chicken breast, cubed in bite-sized pieces
125 grams bacon lardons
1 small onion, finely chopped (about 1 cup)
2 cloves garlic, pressed
2-3 fresh jalapeño peppers, seeded and minced
1/2 teaspoon kosher or other coarse salt
200 grams (.75 cup) evaporated milk, divided
500 mL (2 cups) water (preferably, recently boiled and still hot)
200 grams (1.5 cups) elbow macaroni (or similarly small pasta shape)
1/2 teaspoon cornstarch
3 shakes of Tabasco sauce
200 grams (1.5 cups) grated sharp Cheddar cheese, divided
100 grams spreadable cream cheese
6-10 pickled jalapeño pepper rings, roughly chopped
6 buttery crackers, such as Ritz or Club crackers, crushed into crumbs
Preheat the oven to 180°C/350°F with a rack in the middle. Lightly butter, oil, or grease a 2 litre (2 quart/11x7") casserole dish and put to one side.
Heat a large saucepan over medium heat. Melt the butter, and add the cubed chicken breast. Give it a couple of stirs to lightly brown the outsides, and then remove the chicken pieces to a clean plate to stand by (the chicken won't be cooked through, but it will finish cooking in the oven). Without cleaning the saucepan, add the bacon lardons (this is just short, chunky pieces of bacon - feel free to chop up some thick-cut if you can't find lardons or slab bacon to make lardons from). Let the bacon sizzle and stir it about a for a couple of minutes until it renders about half of its fat, and then use a slotted spoon to remove them from the pan (you can add them to the chicken plate).
Next, add the finely chopped onion and the garlic, and sauté until the onion turns translucent. You'll want to keep stirring so the onion bits don't stick to the fond left behind by the chicken and bacon, and turn the heat down if the edges start browning. Add the minced fresh jalapeños, and stir them for about 30 seconds. Leaving the onion, garlic, and peppers in the pot, add the water and 125 mL (1/2 cup) of the evaporated milk and bring to a boil (you can turn up the heat to medium high, once the liquid has been added). Add the salt and the macaroni, and cook (stirring frequently) until the macaroni is tender and the liquid is reduced to a small amount burbling up between the pieces of pasta. This should only take about 7 or 8 minutes.
Put the remaining 60 mL (1/4 cup) of evaporated milk in a small bowl with the Tabasco and the cornstarch. Stir until smooth. Add to the cooked macaroni and stir until the sauce begins to thicken – no more than a minute or two over high heat. Turn off the heat and add the 1 cup of the cheddar cheese, one handful at a time, stirring it in each time, and adding a tablespoon or two of room-temperature water if it gets too thick to comfortably stir. Once the cup of cheese has all been added, stir in the cream cheese and stir until it melts smoothly into the sauce.
Add the chicken and bacon back into the pasta pot, including any juices that might have pooled in the bottom of the plate. Add the minced pickled jalapeños now, and stir them in, too. Scrape the pasta mixture into the prepared casserole dish, and cover with the remaining cheddar cheese and then top with the crushed cracker crumbs.
Place in the oven, uncovered, and bake for 20 minutes. Let stand for 5 minutes before serving.

Coconut Lime Chicken & Rice Skillet
I developed this recipe because I had a lot of jalapeños to use up, and because I love skillet dinners. It's not quite Caribbean, not quite Mexican, and not quite South East Asian, but it's extremely tasty and a very satisfying meal that takes just over an hour to get on the table - half of that time unattended.
We served this with a salsa fresca (pico de gallo) on the side, but any nice fresh salad would also do the trick. I'm pleased to report that the leftovers, if you're that lucky, also make an excellent filling for wraps - with or without the rice.
Coconut Lime Chicken & Rice Skillet
Serves 3-4
6-8 bone-in chicken parts, with skin
2 tablespoons coarse salt
zest of 1 lime
juice of 1 lime, about 2 tablespoons
200 grams (1 cup, 7.05 oz) uncooked parboiled rice
165 mL (2/3 cup, 5.5 oz) canned coconut milk
4 large jalapeños
1 small onion
2-3 tablespoons shredded fine unsweetened coconut
2 cloves garlic
375 mL (1 3/4 cup, 12.5 oz) boiling water
1 small bunch cilantro, stems removed, chopped roughly (a generous handful)
Preheat the oven to 200 C/400 F.
Remove any excess skin and/or fat from the chicken with a sharp knife. Combine the lime zest with the coarse salt in order to make a seasoned rub. Massage the seasoned salt into the chicken on all sides, discarding the excess salt that falls off in the process. The tops of the chicken pieces should have a sparse but even coating of salt.
In a large (30cm/12") skillet or braising dish, lay the chicken pieces in a single layer, skin-side up. Place the dish in the oven and bake, uncovered, for 30 minutes, during which time you can prepare the other ingredients.
Finely dice the onion, and mince or press the garlic. De-seed the jalapeños, and finely dice one of them. Cut the remaining three jalapeños into rings and set aside until the final stages. Squeeze the juice from the lime. Rinse the rice under cool water until it runs clear.
After the chicken has cooked for 30 minutes, remove it from the oven, and place the skillet on a moderately hot burner. Use tongs or a spatula to transfer the chicken pieces to a clean plate. Into the juices left behind in the emptied skillet, add the onion, garlic, and finely diced jalapeño. Sauté for about two minutes, until the onion softens and turns translucent. Add the rice, and stir it around to coat the grains in the onion and chicken fat mixture. Turn the burner off. Add the lime juice and stir through. Add the coconut and the coconut milk and stir through. Add the boiling water (carefully), and stir though, using a spatula to smooth the rice into an even layer beneath the liquid.
Use tongs or a spatula to transfer the chicken pieces back to the skillet, arranging the pieces in a single layer on top of the rice. The tops of the chicken pieces should not be covered by the cooking liquid, but the sides may be a little until the rice starts absorbing the liquid.
Place the full pan back in the oven, uncovered, on the middle or upper middle rack, and bake for another 30 minutes. You may wish to check it after 20-25 minutes, to make sure it's not drying out, but unless your oven is hot, it should be fine.
Remove the skillet from the oven, and scatter sliced jalapeños and cilantro over top if you're serving the whole dish at the table.
Distribute the chicken to the individual diner's plates, and stir the jalapeños and cilantro through the rice. before serving the rice.
If you would like to make this dish entirely stovetop, that's also manageable, but requires a bit more hands-on labour (and the skin won't be crispy): Sear the seasoned chicken breast on both sides, cooking for a total of about 10 minutes, and set aside. Proceed as above, but reduce the boiling water to 295 mL (10 oz) and instead of placing the assembled dish in the oven, bring the liquid to a gentle simmer on the stovetop and turn the burner to its lowest setting. Cover the pan with a tight-fitting lid, and cook for 15 minutes. Turn the heat off and move the skillet to a cool burner or heatproof pad and let sit undisturbed without ever lifting its lid for another 15 minutes. Serve as above, adding the sliced pepper rings and the cilantro and stirring it through the rice.

Hainanese Chicken Rice
One of the quintessential dishes of Singaporean cuisine, Hainanese Chicken Rice is a bone-deep satisfying meal dished up everywhere from Hawker’s Markets to fancy restaurants. It is an excellent example of how ingredient repetition need not render a meal boring or feel repetitive - the ginger, sesame oil, and garlic are powerful flavours, but come across differently in each item on the finished plate.
This recipe serves 2-4 people (or more, if you double the rice), but in our house it is the start of a multi-meal whose leftovers evolve into two more dishes over the following days (see Multi-meal, at the bottom of this post).
Hainanese Chicken Rice
Adapted from Steamy Kitchen
Chicken
1 whole chicken (about 1.5 kg)
Fresh cool water to cover the chicken
2 teaspoons kosher salt plus extra for exfoliation (as described below)
5 cm chunk of fresh ginger, peeled and sliced
2 stalks green onions, cut into two-inch lengths
Basin of ice water
1 teaspoon toasted sesame oil (for after the chicken is cooked)
Rice
15 mL (1 tablespoon) chicken fat or canola oil
1 large clove garlic, minced or crushed
15 mL (1 tablespoon) minced fresh ginger
200 grams (1 cup) raw basmati rice, washed until the water runs clear
310 mL (1 1/4 cups) reserved chicken poaching broth
1/2 teaspoon toasted sesame oil
1 pinch kosher salt
Chile Sauce
15 mL (1 tablespoon) fresh lime juice
30 mL (2 tablespoons) reserved chicken poaching broth
10 mL (2 teaspoons) sugar
60 mL (4 tablespoons) Sriracha sauce
4 cloves garlic
30 mL (2 tablespoons) minced fresh ginger
a pinch of salt, to taste
To serve
Dark soy sauce (in a dish, or just the bottle)
Green onion, finely sliced on the bias
Cucumber, thinly sliced
First, you must exfoliate the chicken. Rinse the chicken inside and out and place on a clean plate. Use a small handful of kosher or pickling salt to gently massage the chicken all over, being careful not to tear the skin if possible. Rinse the salt away and stuff the chicken with the ginger slices and green onion pieces. Place the chicken in a large stockpot and add fresh cold water to cover (it’s okay if it doesn’t quite cover - the breast will still cook if it sticks up above the water level). Add salt. Cover and bring the pot just barely to a boil over high heat, then immediately turn the heat to low to keep a bare simmer, checking from time to time. Simmer for about 40 minutes (less for smaller chickens).
While the chicken simmers, get your mise en place in order for the chile sauce and the rice. That means, mince the ginger for both the rice and the sauce, peel the garlic and set aside, and wash, wash, wash the rice in cool water until it runs clear. Set the rice aside in a strainer to drain. You can put the sauce ingredients all (except for the broth) into a blender cup now, if you like.
Once the chicken is cooked through, turn off the heat and remove the pot from the burner. Carefully lift the chicken from the broth (I lift it by inserting a wooden spoon into the centre and tilting it up so that the juices run out of the cavity) and into a basin of ice water to cool. You will need the broth for the rice, sauce, and side bowl of soup. I like to have my basin in the sink, so that I can and add more fresh cold water over the chicken to help the skin achieve the firm, springy texture associated with this dish, and I like to change the cold water once as it rests. Let the chicken rest in the cold water while you start cooking the rice. Remove any aromatics (ginger, green onion) from the broth, and return the pot of broth to the stove to stay warm over low heat.
Rice: You rice should by now have been rinsed and drained and is resting nearby in a sieve. Heat the chicken fat or canola oil over medium-high heat in a medium saucepan. Add the ginger and the garlic and pinch of salt, and stir fry until fragrant but not coloured. Add the sesame oil and then drained rice and stir to coat each grain with the fat and seasonings.
If you’re cooking the rice on the stovetop, add the 310 mL of hot poaching broth to the rice and stir it through. Turn the heat to the lowest setting, and cover the pan with a tight fitting lid. Set the timer for 15 minutes, and when it rings remove the rice pot from the hot burner and, without lifting the lid, set it aside to rest somewhere for another 15 minutes. Fluff, and it's ready to serve.
If you’re cooking the rice in a rice cooker, use a spatula to scrape the rice/fat/seasoning mixture into the rice cooker, add the poaching broth, and then turn it on according to your rice cooker’s instructions.
While the rice is cooking, remove the chicken from its ice bath and pat dry with paper towels. Using your impeccably clean fingers, rub the outside of the chicken with the sesame oil, and let it stand until needed. Just before the rice is finished resting, carve the chicken for serving and arrange on plates, and then add the rice once it's ready. For a nice tidy dome of rice, pack it lightly into a measuring cup and overturn onto the plate. I find a 3/4-cup measure works perfectly, yielding 4 portions of rice from 200 grams (1 cup) of raw rice.
Chile Sauce: combine all chile sauce ingredients in a blender cup and process until smooth. Stick blenders work very well for this. The first time I made this, I didn’t have access to any mechanical means to puree it, so I simply finely chopped everything by hand. That also worked very nicely, but it was of course not a smooth sauce.
Soup: You should have several cups of the chicken-poaching broth available. Ladle into small bowls and garnish with some finely sliced green onion.
Serve the chicken and rice with cucumber slices, and a bowl of the soup on the side. Place the chile sauce and some dark soy sauce on the table for individuals to use at will.
Multi-meal
I mentioned at the start of this post that this is a multi-meal dish for our household of two (your mileage may vary, depending on your family size - for bigger families, you would want to have doubled the rice recipe above). This is what I do:
Finally, after you’ve eaten and had a little rest, strip the remaining chicken meat from the bones, and put in a container in the fridge. As for the bones, you can either discard them, or add them back into the soup pot and simmer them for another hour or so for a much stronger broth. Cool and strain the broth, and transfer to fridge/freezer friendly containers. Cool and refrigerate any leftover rice.
The next day, leftover rice and about half of the leftover chicken meat are converted into fried rice (this is an especially good use for any leftover skin!) with the addition of a little extra onion, ginger, garlic, beaten egg, low-sodium soy sauce, any any other vegetables you’ve got kicking around. (For fried rice technique, please see my post on fried rice, and adapt as necessary.) Serve with leftover chile sauce, if you have any.
The following day, the leftover broth (or some of it) is used to make congee, by adding some water, washed raw rice, and the remaining chicken meat (added at the very end). Serve with leftover chile sauce, if you have any.
Alternatively, you could stash all of the broth in the freezer and use that instead of water for the next time you want to make Hainanese Chicken Rice. Because, there will be a next time. If you have lots of broth, you can split the difference.

Buffalo Chicken Pizza
Buffalo wings have run deliciously amok. What started out as a simple bar snack, has since become everything from pasta to dip to casserole to pizza, and gone through some interesting ingredient iterations: some folks swap out the blue cheese dressing for ranch, and some even switch the chicken with cauliflower. The configurations seem endless, and that's good news for those of us who love our hot sauce oriented food.
This particular pizza is a pretty stripped down version of the classic combination of Frank's Red Hot sauce, chicken, and blue cheese dressing. Because it's pizza, I've added a final layer of shredded mozzarella, just to tie it all together. I've dispensed with the traditional carrot and celery sticks, although you could either serve them alongside (which would be appropriate) or dice them finely and use them as a topping - but I think they would be a bit of a distraction there. So.
Buffalo Chicken Pizza
1 Standard pizza
! batch pizza crust dough (see below)
125 mL (1/2 cup) creamy blue cheese dressing (or more to taste)
350 grams cooked, shredded chicken
60 mL (1/4 cup) Frank's Red Hot sauce (original)
1 tablespoon butter
200 grams shredded mozzarella
Dough
3/4 cup warm water (not hot)
1-2 teaspoons active dry yeast (use 1 tablespoon if you don't have the time to let it rise)
1 tablespoon olive oil
Approximately 2 cups of all-purpose flour
1 teaspoon coarse salt
Test the water by sticking your impeccably clean finger in it. If it's pleasantly warm, but not hot, you're good to go. If not, adjust as needed. Pour warm water into a medium sized mixing bowl. Sprinkle sugar and yeast over the water and let stand for about five minutes. The yeast will soften, and gradually start to foam up to the top of the water. This usually only takes a few minutes, but if your water is quite cool it might take a little longer. Once the yeast has gotten foamy, stir in the olive oil (or canola, if you don't have olive oil) and 1/2 cup of the flour.
Stir until combined into a sort of paste, and then beat vigorously for 100 strokes all in the same direction. It sounds silly, but this is the basis for a very smooth dough, and it doesn't actually take very long at all. A wooden spoon is ideal for the job. Once your mixture is smooth and silky-looking, add the salt and 1 cup of flour. Stir until the flour is mostly incorporated - it gets very stiff very quickly - and then turn out onto a clean counter to knead. Add more flour as you need it, if the dough seems sticky or wet.
Knead the dough briskly for about five minutes, or until it comes together in a satiny ball and is no longer sticky. Let the dough rest on the counter while you wash out the bowl that you started it in. Wash and dry the bowl, and spritz with a little oil. Place your dough into the bowl (turn it over once so that a little oil gets on the top) and cover with a towel while you prepare your toppings. The dough doesn't need to rise double in size (although it's fine if it does) but it should show some signs of life when you get back to it - be softer and a little risen.
Turn the oven on to preheat to 220°C / 450°F, with the rack placed in the middle. Prepare a pizza pan by sprinkling a generous amount of cornmeal in a thin layer over it, or lightly oiling.
Toppings
In a small skillet, heat the butter and hot sauce together and stir well to integrate (a whisk might help). Add the shredded chicken and toss/stir to thoroughly coat.
Press the dough out evenly on your pan. If the dough is still a bit tense, it might take a little longer, but this amount of dough will fit a full sized pizza pan. Just be patient and keep pressing it out, even if it tries to spring back, or let it rest for 5 minutes and try again. Once the dough is stretched to the full size of the pan, spread the blue cheese (or ranch, if you must) dressing evenly over it, leaving a little uncovered around the edge. Use a big spoon or your fingers to distribute the sauced up chicken over the dressing, and then add your mozzarella.
Slide the pan into your preheated oven and bake for at least 12 - 15 minutes (depending on your oven, maybe a little more), or until the crust is golden and delicious.
Slide pizza onto cutting board and pretend you're going to share. Put the rest of the bottle of Frank's Red Hot on the table...and try not to burn your mouth from devouring everything too quickly.
Note about foil: If you have cleverly put down a layer of foil in the bottom of your oven to protect it from drips, know that this is going to have a negative impact on the cooking time and browning of your pizza - especially the bottoms thereof. Put a baking sheet down there if you must, but foil really screws with the heat flow in an oven, and things take much longer to cook (and don't brown evenly). It might not affect other recipes, but it's terrible for pizza and pie crusts.
I added an extra perimeter of cheese and popped mine back in the oven for a couple of minutes, because it seemed like a good idea. It was. If you have some nice, mild, crumbly Danish blue cheese, that would go perfectly here.

Peanut Chicken Salad Bowl
Every summer, I make some version of this salad. Sometimes it has rice noodles, sometimes it has rice instead of noodles, and sometimes it has dried ramen (not the instant ones) or mie noodles. But you can vary that bit to your heart's content. The important thing to remember, if you're using noodles of any kind, is to quick-chill them in an ice water bath as soon as they're cooked (otherwise they soak up all the sauce, leaving your chicken and veggies high and dry).
Like many great recipe notions, this is infinitely customizable. The varieties of vegetables are completely up to you - what have you got in your kitchen today? I particularly like zucchini bâtonnets in this salad, although I didn't have any zucchini on hand when I made this particular one. And even the chicken - poach some freshly to shred for the salad, or use last night's roast chicken leftovers. Roasted peanuts give a satisfying toasty crunch that is entirely different from the fresh crunch of the cabbage.
So what's in this one bowl?
Peanut Chicken Salad Bowl
1 nest of non-instant mie or dry ramen noodles, cooked
1 chicken breast, poached and shredded
1/3 cup purple cabbage, finely shredded
1/4 red bell pepper, finely sliced
1/2 green onion, sliced on the diagonal
1/2 medium carrot, shredded on a box grater (large holes)
3 tablespoons roasted salted peanuts
cilantro
lime wedge
1/2 recipe Peanut Dressing (see below)
If you are starting with raw chicken breast, place it in a shallow pan half-filled with cold water (or chicken stock), and bring to a simmer. If you have some fresh ginger, you might want to throw a couple of slices into the cooking liquid. As soon as it simmers, turn the chicken over, cover tightly with a lid, and turn off the heat (you can leave it on the same burner, though). Set the timer for 25 minutes. When the timer goes off, remove the chicken from the liquid, and shred using two forks or your fingers (it will be a bit hot). This can be done ahead, if you like, and stored tightly covered in the fridge.
Cook the noodles in plenty of boiling water, and when they are done, drain them and plunge them into an ice water bath to stop the cooking. The noodles can stay in the cold water while you prepare the vegetables, but then you want to drain them really well in a colander before assembling the salad. It's okay if they're still damp, but you don't want them dripping liquid.
Chop the vegetables into bite-sized pieces (I shred the purple cabbage as though making coleslaw).
To assemble the salad, I like to put a small spoonful of dressing in the bottom of the bowl, and then add the drained noodles. Arrange the chopped vegetables and shredded chicken however you please, adding the peanuts last. Drizzle with remaining dressing, and serve - each person can mix up their own bowl as they see fit.
Here's my foundation recipe for the dressing - it too mutates from time to time, but this is my gold standard.
Peanut Dressing for Salads & Salad Rolls
Makes enough for 2 salad bowls or six summer rolls - a bit more than half a cup.
60 mL (1/4 cup) unsalted smooth peanut butter
1 tablespoon Hoisin sauce
1 tablespoon less-sodium soy sauce
1/2 tablespoon toasted sesame oil
1 clove garlic, minced or pressed
1/2 medium lime, juice only, about a tablespoon
1 tablespoon brown or raw sugar
1/2 tablespoon Sriracha
60 mL (1/4 cup) water
Place all the sauce ingredients in a blender cup and process until smooth (I use my stick blender for this, but a mini-prep or small-cup blender would be fine). Drizzle over composed salad for individual diners to mix as desired, or serve in small bowls for dipping summer rolls.
As you can probably imagine, this salad travels well for work lunches or picnics. It keeps well in the fridge overnight if you're a meal prepper, too - just hold off, ideally, on the dressing until ready to eat.

Chicken Parmigiana
Chicken Parmigiana is a bit of a process, but it doesn't have to be an ordeal to make at home. Moreover, there's one truly excellent reason to do so: leftover chicken parmigiana makes simply amazing sandwiches.
It helps lighten the workload if you have some good homemade basic tomato sauce on hand (I like to keep some in the freezer), but you could use a purchased one. The chicken itself is shallow-fried rather than deep fried (you could also bake them), and the cooking time is actually pretty quick. You might want to have your side dishes already to go when you lay the chicken in the pan, because the cooking time is mostly active and it can be challenging to do tend to two items that are highly active at the same time. Fortunately for me, my chosen side dish of spaghetti aglio e olio wasn't time or labour intensive (and the mise en place was done in advance), which minimized the juggling.
Restaurant versions of chicken parmigiana often are a bit light on the parmesan cheese, and for extra gooey-ness include a lot of mozzarella. Now, I like mozzarella just fine, but I didn't want its rich presence to overshadow the parmesan itself, so I simply went to town with a lot of parmesan before it went into the oven, and a renewed layer of freshly grated parmesan when it came out.
It's always important to maintain good kitchen hygiene when working with raw chicken, so I lay out the breading bowls in a straight line, to ensure I'm not going back and forth.
Chicken Parmigiana
Makes 4 cutlets
2 large boneless, skinless chicken breasts
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon ground white pepper
1 egg, beaten
2 cups coarse, dry breadcrumbs, such as panko
1 cup basic tomato sauce
1 cup freshly grated/shredded parmesan
canola oil - enough to cover the bottom of a large skillet about a centimetre deep
Before you start with the chicken, get your pan ready with the oil - you'll want it heated to about 180-190°C (350-375°F) if you have the ability to control/set the temperature. Otherwise, set it over medium heat for now. Turn the oven on to preheat to 200°C (400°F) with the rack in the middle of the oven. Place the tomato sauce in a small skillet or saucepan to warm up.
Using a sharp knife, slice each chicken breast horizontally into two thin cutlets. With a mallet or other meat-flattening device, gently pound the cutlets until they are about a quarter bigger than they were, and the meat is as even as you can make it. Move your four cutlets to the start of your breading line (be sure to have a clean plate and the end of the line, to hold the breaded cutlets).
Mix the flour with the salt and pepper (you can add a pinch or two of dried basil or oregano if you like) in a wide, shallow bowl wide enough to fit the flattened cutlet. In the next bowl, place the beaten egg. In the final bowl, the breadcrumbs.
Without hurrying, dip the first cutlet into the flour mixture to thoroughly coat it on all sides, and give it a good shake to remove any excess flour back into the bowl. Then, dip the floured cutlet into the egg, again, coating it thoroughly, and letting any excess drip back into the bowl. Next, lay the cutlet in the breadcrumbs, and press it down firmly so the breadcrumbs really stick to it. Turn it over and press again. Lift gently (no need to shake this time) and lay it on the receiving plate at the end of the line. Repeat until all four cutlets are breaded.
When your oil is ready (it may already be ready - test it by sticking a wooden skewer or raw spaghetti strand in, and if it bubbles immediately it's good to go), lay the first two cutlets side by side in the pan (I use tongs to gently lay them in the pan). While they fry, place a metal baking/cooling rack on a sheet pan and have it standing by to receive the fried cutlets. When the bottom side is golden brown, use the tongs to flip the cutlets over to the other side. It doesn't take longer than a couple of minutes, because the cutlets are so thin, so pay attention to them. When the first two are done, remove them to your rack-on-the-baking sheet, and start frying the remaining two cutlets the same as the first. While they are frying, grate your parmesan.
When the second pair of cutlets have finished frying and have joined the first pair on the rack, spoon a little of the tomato sauce onto each cutlet, spreading it to cover the top surface (you might have some sauce leftover). Next, add a hearty layer of grated parmesan on top of the tomato sauce, and then transfer the whole rack & sheet to the oven for a few minutes until the parmesan is melted and the dish comes together as a glorious whole. Remove the rack from the oven, add a fresh layer of parmesan, and serve immediately.
But wait...I mentioned sandwiches, right?
So, if you planned to have some cutlets leftover, leave them on the rack to cool completely, and then transfer to an airtight container in the fridge. When you are ready to turn them into sandwiches, take them out of the fridge and place them in a dry skillet over medium heat for a few minutes, to take the chill off of them. Then, they are ready to slide into a lightly buttered bun (you don't need other condiments, although if a few fresh basil leaves happen to mysteriously fall into the sandwich it wouldn't end the world). Slice each bun in half, and serve - or wrap well in greaseproof paper for a picnic.
You could of course use other bread, but I find a nice, fresh bun has the sturdiness to cope with such an imposing filling. It also means that the cutlet will just slightly overhang the bun, which is an ideal ratio of bread for this kind of sandwich.

Chicken Salad with Feta & Mint
The combination of yoghurt, feta and mint give a bit of Persian flare to this salad, and make it so fresh tasting. You can use leftover roasted chicken if you like, but I like to make this with chicken breast that has been steeped or gently poached in chicken broth (or stock) for the juiciest, most tender chicken salad imaginable.
It's important to use a yoghurt whose flavour you like. If you choose a very sour yoghurt, that will be reflected in the finished salad. If you think your yoghurt might be a bit too sour, you can always cut it half-and-half with a mayonnaise or crème fraîche, to soften the flavour - although that will of course make for a richer salad overall.
Chicken Salad with Feta & Mint
Makes about 2 cups
225 grams cooked chicken breast
50 grams plain feta cheese (not marinated)
3 tablespoons finely chopped fresh mint
1/4 cup julienned de-seeded cucumber
1/4 cup plain Mediterranean-style thick yoghurt
1/4 teaspoon ground white pepper
Salt to taste, if necessary
Ground sumac to finish (optional)
If you are freshly cooking the chicken just for this recipe, set it aside to cool while you prepare the other ingredients.
Finely dice the chicken breast and heap it into a mixing bowl. Crumble the feta over the chicken.
Cut a 5-6 cm piece of cucumber, and slice it into quarters, lengthwise (if it is a thick-skinned cucumber, peel it). Slice away the seeds from each quarter, and then finely julienne the remaining cucumber flesh (you don't want the pieces too long - very short lengths work best. I usually eat the seeds while I'm doing this, because they're tasty, but they are too wet to leave in the finished dish. Blot the sliced cucumber pieces dry with a bit of clean kitchen towel, and add them to the bowl with the chicken and feta. Sprinkle the white pepper over the chicken mixture, and use a fork to thoroughly stir everything together.
Add the yoghurt and the chopped mint, and stir through. Taste, to see if it needs salt (if your feta is very salty, it probably won't, but if it's milder, it might). Cover tightly and refrigerate for an hour or so to give the flavours a chance to meld. Use as a sandwich filling, or simply scoop it onto some greens for a light meal.
If you happen to have some ground sumac, sprinkle a bit lightly over the filling before closing up the sandwich. The lemony-earthy note of the sumac complements the other flavours very nicely.
While it works very nicely in a traditional two-slices-of-bread sandwich, it is also excellent as a wrap filling (I've used both tortillas and lavash to great success), or stuffed into a pita. As you can see, I fill my sandwiches quite generously, using about a cup of salad per sandwich, but if you are doing flatbread roll-ups to accompany a soup, you might want to make them a little smaller.
This salad keeps well overnight in the fridge, but you probably don't want to leave it longer than that, or the enzymes in the cucumber will start to break down the yoghurt, making it watery.

Poule au Pot: French simmered chicken
This wonderfully easy dish is one of the hearts of French country cooking. There is a bit of prep, and a rather long simmering time - but one that requires little effort from the cook. The end result is incredibly tender poached chicken, an assortment of vegetables, and an outstanding stock that can be served with the dish (pooled around the chicken and vegetables), alongside the dish (in a small bowl or cup), or kept aside for any other use you might have for a large quantity of fragrant, intense chicken stock.
Poule au Pot (Chicken in the pot) is the very close cousin of Pot au Feu (Pot on the fire) which is essentially the same dish by method, but made with beef instead of chicken and slightly different seasonings. There are a lot of variations of Poule au Pot, but I have chosen a fairly classic combination of vegetables. Some versions include a ground meat stuffing for the chicken, but I decided that it would be plenty of food on its own, and instead used the chicken cavity to hold the fresh thyme safely out of the way of the cooking vegetables.
When I was researching the recipe, I discovered a lot of references to a (poorly documented) speech by France's King Henry IV declaring the goal of "a chicken in every labourer's pot" - for certain values of labourer, anyway. A more modern example of the sentiment is found in Herbert Hoover's US presidential campaign in 1928, in the form of a circular promising "a chicken in every pot and a car in every garage."
There are a lot of ways to boil a chicken; I was honestly a bit skeptical of the long simmering time, given my almost complete conversion to the steeping method for cooking poultry. But the chicken is not cottony or tough. In fact, the chicken falls from the bones so easily that one should pay attention when separating the meat from the bones and what we like to call the grebbly bits.
I chose to serve this one with a white, roux-based sauce which I have seen named variously Sauce Blanche, Sauce Ivoire, and Sauce Suprême, amongst others. It is made with a velouté, using some of the stock from cooking the chicken, an egg yolk, milk, and crème fraîche. Recipe for my version of the sauce follows the Poule au Pot recipe below. We originally draped the sauce only over the chicken, but subsequently added it to the vegetables, too.
Speaking of the vegetables, I only cooked enough vegetables for two servings, which is why the mise en place looks a little light in the pictures below. Increase the number of vegetables as needed (or as your cooking pot allows).
Poule au Pot
Serves 4 - 6
1 whole chicken
water, enough to almost cover the chicken in a dutch oven
1 tablespoon coarse salt, plus extra salt to exfoliate the chicken
1 medium onion
4 whole cloves (spice)
3 - 4 sprigs fresh thyme
2 bay leaves
4 medium potatoes
8 small carrots
4 small turnips
2 small leeks
2 stalks celery
4 cloves garlic
Step 1: exfoliate the raw chicken. This is a technique I learned from Singaporean cuisine (specifically, Hainanese Chicken). First, remove any pinfeathers or feather debris from the chicken skin. Take a handful of salt (preferably smooth-surfaced coarse salt, such as pickling salt, to avoid tearing the skin), and massage it thoroughly into the chicken. All over. This is best done over a sink, so you can let the salt fall freely down the drain for easy clean up. When the chicken skin is smooth and tight-looking, rinse the salt from the chicken, drain and place the chicken in a large cooking pot (I used a dutch oven).
Step 2: Stuff the thyme into the cavity of the chicken, and tie the legs closed. Wash all of the vegetables thoroughly, and peel or trim where needed. Remove the dark green parts of the leeks and tuck them (and the feathery tops from the celery) around the chicken. Peel and quarter the onion, and stick the outer layer of each quarter with a clove. Add the onion quarters to the pot. Add the bay leaves to the pot. Gently pour cold water over the chicken until it is almost covered, with just the top of the breast above water.
Step 3: Turn the heat on high, and cover the pot until the water starts to just barely boil. Remove the lid and skim away any grey scum that may rise to the surface (there will be a lot less scum if you have exfoliated the chicken - I only needed to wipe the inside edge of the pot with a towel). Turn the heat to low, cover the pot again, and let simmer very gently for 80 minutes. Check it from time to time, and it if is bubbling too vigorously on the lowest temperature, leave the lid cocked to release some of the heat. You can use some of this time to peel and trim the vegetables.
Step 4: Use tongs or a slotted spoon to removed the leek tops from the pot. You can discard them (they are fibrous and have given up all of their flavour to the stock already). Raise the heat under the pot, and carefully add the raw vegetables to the pot, tucking them around the chicken if possible. If you really need more space, you can lift the chicken up (carefully!) and put the raw vegetables underneath it. More of the chicken will stick out of the water, but that's fine. If you need to remove some of the liquid to avoid the pot from overflowing, scoop some of the broth out with a measuring cup into a clean bowl or mug. The raw vegetables will cool the broth, which is why you've turned the heat up. When it begins to bubble once more (gently!) turn the heat back to minimum and cover the pot. Continue to cook for another 30 minutes (35 minutes if your potatoes are as large as these ones).
Step 5: While the vegetables finish cooking, and make the Sauce Suprême (see below). Warm some shallow bowls or plates, if necessary.
Step 6: Test the potatoes for doneness with a fork, and if they are not ready, continue to cook for another five or ten minutes, as needed. When they are cooked through, use a slotted spoon and/or spider to gently remove the vegetables and the chicken from the stock, being careful not to crush them.
Arrange on a platter if serving at the table, otherwise, divide the vegetables between the individual bowls. Carve the chicken into quarters (or sixths) and distribute amongst the bowls. You can add a little of the chicken stock to the bottom of each bowl, if you like. Spoon a little sauce over the chicken, and garnish with freshly ground black pepper. Serve with extra sauce on the side, if you like.
Accompany with a crisp white wine.
Sauce Suprême
Serves 4 - 6
30 grams salted butter
30 grams flour
400 mL chicken stock (or a combination of chicken stock and whole milk)
1 egg yolk
200 grams crème fraîche
In a small saucepan, melt the butter and stir in the flour. Cook and stir over medium heat for about five minutes, but don't let the roux darken. Add the chicken stock to the roux, slowly, whisking constantly, until smooth, and then turn the heat to low. Add a spoonful of the crème fraîche to the egg yolk, and stir to combine. Add the yolk mixture into the sauce, and whisk until thoroughly incorporated. Add the rest of the crème fraîche, and stir it through. Keep the mixture on low heat, stirring, and let it heat thoroughly, but do not let it boil. If you see any bubbles at all, remove the pot from the burner entirely. The sauce can stand while it awaits the chicken and vegetables to be ready.
One final note - you can of course customize the vegetables, and even the seasonings, to your taste. I've seen versions with green cabbage (blanche, before adding to the pot, to defeat the infamous "cabbagey smell"), rutabaga, parsnips, fennel bulb, tarragon, parsley, and shallots. Sweet potato might be nice, too. Essentially, any vegetable you'd like in a stew, you can pretty much use here. If you are not a fan of potatoes, feel free to omit them from the recipe and instead cook up some rice on the side (or do both if you just really like carbohydrates). Plain rice or mushroom pilaf both appear to be popular choices.

Buffalo Chicken Pasta
There are oh-so-many recipes for buffalo chicken pasta casseroles out there, and they're all surprisingly different. This is not a casserole, however, but a pasta sauce made from chicken and a buffalo-wing-style sauce, layered with blue cheese dressing and onto cooked long noodles, and topped with crumbled blue cheese. As you eat, the sauce and cheese combine to coat the pasta so that each bite is rich, delicious, and extremely satisfying.
If you are using the crumbled blue cheese, I recommend a mild style, such as Danish Blue. I used a German blue cheese called Kornblume, which is similar in flavour profile. I don't recommend gorgonzola or roquefort for this, as delicious as they are. The gorgonzola has the wrong texture and flavour, and the roquefort is a bit strong in this context. Maytag would work well for people who like their blue cheese a bit more intense.
Buffalo Chicken Pasta
Serves 2
150 grams dry linguine
1 tablespoon of butter
250 grams chicken breast, poached gently and shredded
125 mL Frank's Red Hot sauce (original style)
2 tablespoons butter
1 teaspoon Worcestershire sauce
125 mL blue cheese dressing
4 tablespoons crumbled blue cheese (optional)
Cook the linguine to your preferred doneness and drain. Toss with a tablespoon of butter, and divide between two pasta bowls. While the linguine cooks, combine the hot sauce, butter, and Worcestershire sauce in a small skillet, and stir to combine. Add the shredded chicken and stir through to ensure that all of the chicken is nicely coated in the hot sauce. Keep it warm over low heat with the lid off, to let the sauce thicken a bit.
Once the linguine is plated, spoon a little of the blue cheese dressing over each bowl, and then divide the chicken between the bowls (use a slotted spoon to remove the chicken from any excess sauce). Spoon the rest of the blue cheese dressing over the chicken, and then add the crumbled blue cheese. Add a final drizzle of the hot sauce mixture over the top, and devour immediately.
To keep the buffalo wing theme going, we had this with a salad of finely sliced celery and carrot, topped with another bit of the blue cheese dressing. It made a refreshing contrast to the richness of the pasta, and is highly recommended.
Finally, I should note that if you make a bit more chicken than you need for this recipe, the leftovers make a fairly stunning grilled cheese. Yeah.

Moroccan Chicken with Olives and Preserved Lemon: Djaj M'qualli bi Zeitoun
Chicken, lemon, and olives are a delicious culinary trinity that appear together in many iterations from many cultures, especially those around the Mediterranean Sea. If you've tried my sure-fire dinner classic Chicken Sahara, you'll find a version particularly adapted to the North American manner of cooking. If you look into the dish's roots, though, you'll find one of its fascinating grandparents in Djaj M'qualli (transliterations of which also vary quite wildly).
This is a traditional Moroccan dish, with a complex harmony of flavours and a really impressive use of onions. The recipe classically also uses a chicken liver in the sauce, which I wasn't able to arrange despite having had chicken livers the night before, but I'd really like to do it that way next time. Unlike Chicken Sahara, or many of the chicken-lemon-olive tagine recipes out there, this is, as you can see, something of an almost dry dish - the sauce reduces to a thick gravy that drapes over the chicken rather than providing a pool for it to swim in. This recipe was adapted minimally from Fleur d'Oranger, Masala & Co.
One more thing: If you made Preserved Lemons back in January? This is a terrific use for them!
Moroccan Chicken with Olives and Preserved Lemon
Serves 4
4 chicken leg quarters, whole, skin on
3 medium yellow onions, finely chopped
2 cloves of garlic, crushed
1 chicken liver (optional)
1 cup Moroccan purple or green olives
1/2 preserved lemon (or several pieces, seeds removed)
1 tablespoon soft or melted butter
1/2 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground white pepper
1 teaspoon ground ginger
1/2 teaspoon ground cumin
1/2 teaspoon ground cayenne
1/2 teaspoon ground paprika
pinch of saffron threads, lightly warmed in a dry skillet
Water, as needed
For extra juicy chicken, brine it for four hours or so before proceeding.
Rinse and dry the chicken pieces. Combine the butter and the spices (except the saffron) into a spice paste, and massage all of the chicken parts thoroughly with the mixture. Lay the chicken pieces skin-side up in a single layer in a large skillet, and sprinkle the finely chopped onions and crushed garlic in between the pieces. Add enough fresh cool water to come half-way up the chicken. Turn the heat on high, and bring the water up to a simmer. Reduce the heat to the minimum, cover, and let the chicken simmer very gently until tender, about an hour.
Preheat the oven to 220C/425F.
Remove the lid from the skillet and use tongs to remove the chicken pieces to a baking sheet (I used a pizza pan). Place the chicken, uncovered in the oven and roast for 10-15 minutes or until golden brown.
While the chicken browns and crisps, turn the heat up to high under the onion/water mixture and start stirring and scraping the mixture, reducing the water and cooking down the onion down to a thick mass. Add the chicken liver now, if using, grating it into the sauce as it cooks. Continue to cook and stir as it reduces. Add the olives, and add the saffron now, too (rub it between your fingers over the pan to crush the threads). Slice away and reserve the peels of the preserved lemon and add the middle parts to the gravy. Continue to cook and stir as the sauce thickens up until it is a thick gravy.
Remove the browned chicken from the oven and arrange on a platter. Spoon the gravy (called a deghmira), including the olives, over the chicken. Thinly slice the preserved lemon peels and decorate the chicken with the resultant strips.
Serve with warm bread and a salad or two.
The lucky person who got to take leftovers to work the next day reported that the sauce was even better on the second day, so it might well be worth making this ahead, especially if you're having guests to dinner.

Oyakodon: Japanese Chicken & Egg Rice Bowl
Oyakodon, or "parent-child rice bowl" (in reference to the use of both chicken and egg in the same dish) is a beloved Japanese comfort food. It is simple food, quickly and easily prepared, packed with protein and satisfaction. It is also cooked without any additional fat, which means it doesn't taste or feel heavy.
It can be a wetter or drier dish, but in all the different oyakodon I've eaten over the years, the biggest point of variation that I've encountered is the amount of onions used. But, like many recipes that are based on loose formulae, you can really make your own decision about the relative levels of pretty much all of the ingredients, so once you know the basic formula and general ingredients, you can make it however you like. I like a moderate amount of onions and I add fresh ginger to mine, which isn't exactly canon, but goes beautifully.
This dish can also be halved for a simple supper for one.
Oyakodon
2 servings
2 cups hot, cooked Japanese rice
1 uncooked chicken breast or 2 chicken thighs
1 small-to-medium yellow onion
3 coins of fresh ginger
2 eggs, lightly beaten
1-2 tablespoons less-sodium Japanese soy sauce
1 tablespoon mirin
2 tablespoons sake
1/2 teaspoon sugar
1 cup vegetable stock (you can also use dashi, kombu stock)
1 green onion
Togarashi pepper blend, to taste
Peel and halve the yellow onion, and slice thinly lengthwise. Stack the ginger coins, and slice them into thin slivers. Clean the green onion, and slice it thinly on a steep angle. Slice the chicken breast horizontally into two filets, and slice those crosswise into strips.
In a shallow skillet over moderate heat, heat the stock with the sugar, mirin, saki, and soy sauce. Add the sliced yellow onion and the ginger slices, and push them down into the broth. Once the onions are translucent and a little of the broth has cooked down, add the chicken strips, and push them down into the broth. Cook the chicken for about five to seven minutes or until just cooked through.
Add the beaten eggs in a thin stream, pouring them evenly around the chicken in the skillet, pop the lid on for about 30 seconds until the eggs are just set, during which time you can divide the rice between two bowls. Using a large serving spoon, slide the chicken, onions, and eggs out of the skillet overtop the rice. Pour a little or a lot of the broth around the edges of the bowl to bring extra flavour to the rice.
Top each bowl with green onion and a sprinkle of Togarashi, and serve (I also added some toasted sesame seeds).
Traditionally, the egg is added at the very last minute (into the individual bowls, even), and cooked solely by the heat of the broth, chicken and rice, but I prefer to let the eggs set a bit more. If you're not sure how safe your eggs are to consume raw, definitely cook them through.

Chicken Tikka Masala
There are a lot of origin stories about Chicken Tikka Masala, and a lot of claims to ownership. As far as I can tell, there's no way to even verify which country the dish originated in, let alone the specific claimant.
Some folks will tell you that this is not a proper curry, but that is quite ridiculous. It may not be a historical dish, but it's in no way illegitimate because of that. It's delicious and acceptable and popular. At it's heart, it is derived from an Indian tandoori dish called Chicken Tikka - marinated chicken cooked in a tandoor (Indian clay oven), although according to Wikipedia, the Punjabi version is simply cooked over coals. The chicken is usually marinated in yoghurt and spices, and is typically cut into chunks and cooked on skewers. Where the masala bit comes in, is when you take a perfectly good (or maybe a little dry?) Chicken Tikka, and simmer it gently in a spiced tomato sauce, enriched with yoghurt at the end. There are, of course, many iterations, including one of the origin stories, which claims that an undiluted can of Campbell's Tomato Soup was the base of the sauce.
There is likely no place on earth where Chicken Tikka Masala is more popular than the UK, where it appears to be fast approaching (or even edging out) the traditional Sunday roast as most beloved national dish. You can get Chicken Tikka Masala pre-packaged sandwiches in the Tesco, which gives you an idea of the market penetration of the dish.
Versions of Chicken Tikka Masala that are made using commercial Tandoori paste often have a pink tone to the gravy and the outer surface of the chicken itself. Since that is derived using a food colouring that I don't usually have in my kitchen, I skipped it and simply went with a turmeric-forward spice mixture that is often used for Chicken Tikka. If yours must be pink, skips the spices listed below in favour of the commercial paste, and slather the chicken pieces liberally with it.
I don't have a tandoor oven, which is probably no surprise, nor do I have a kitchen set-up conducive to cooking with coals. This is my home kitchen version, adapted from many different sources, but this one from Palachinkablog in particular.
Chicken Tikka Masala
Serves 4
2 tablespoons ghee or vegetable oil, divided
400 grams boneless chicken, in chunks
2 tablespoons turmeric
2 tablespoons ground cumin
1 tablespoon cayenne
1 teaspoon ground coriander seed
1/2 teaspoon kosher salt
1 large onion, grated
4-5 cloves garlic, pressed
1 inch fresh ginger, grated
500 mL tomato passata (or unseasoned tomato purée)
1/2 teaspoon sugar (optional)
1 cup full-fat plain yoghurt
1 tablespoon cornstarch
As always with Indian food, prep your mise en place completely before you start cooking. Put your basmati rice on to soak in its cooking water, too. Start to cook the rice just before you start to cook the chicken (unless you are using a rice cooker, in which case, time it to be ready when the chicken is done - about a 35 minute total cook time).
Combine all of the dry spices except the salt, and toss the chicken pieces in the mixture until they are all nicely coated. Set aside. You can do this in the morning, or at any point during the day, but bring back up to room temperature before cooking.
In a large skillet or a dutch oven, heat half the oil or ghee very hot and sear the chicken in batches, without cooking through, and remove the chicken to a holding plate as you go. When all the chicken is seared, add the rest of the oil and the grated onion, pressed garlic, and grated ginger, and any accumulated juices therefrom. Stir and scrape the pan, add the salt, and continue sautéing the onion mixture for about 5 minutes or so until just tender. Turn down the heat to medium-low and add the passata, and stir and scrape to ensure that the bottom is free of any stuck-on bits. After a couple of minutes, taste the sauce. If it is a little bitter from the tomato addition, add the sugar. If not, just proceed.
Add the seared chicken (and any residual spices) into the sauce, and turn the heat to its lowest setting. Let the chicken simmer very gently for 15 - 20 minutes. Take the pan off the heat. Combine the yoghurt and cornstarch and stir until smooth. Add a bit of the tomato sauce to the yoghurt, and stir it in, before adding all of the yoghurt mixture into the dutch oven. Stir through, watching to colour lighten and turn orangey. Cover and let the residual heat cook the cornstarch for about five minutes - just enough time to fry up some Indian-spiced Cabbage on the side, or make a fresh chutney or maybe a grated carrot salad, since your grater is already out. Your rice should also be done (and waiting patiently). If you happen to have some cilantro on hand, that would make a very nice garnish.

Chicken Plov — Chicken and Rice, Uzbek Style
I always associated plov with Russian cuisine -- partly because it has been adopted as the pilaf of choice for much of the former USSR, and partly because there were very few restaurants in my hometown (or, later, the city of Vancouver) featuring cuisine from Eastern Europe or Central Asia. Russian, you might be able to find in the city (or more likely, a blend of Russian and Ukrainian dishes), but not much luck trying to find restaurants featuring Georgian, Kyrgyz, or Uzbek food.
Plov, as it turns out, is ultimately a traditional Uzbek dish. By any other name, it might be palov, polov, or pilav, or perhaps more recognisably pilau, pulau, polow, pilaf, or almost any other spelling imaginable. It is considered a manly sort of dish to cook, the making of which can take on similar cultural overtones (sometimes similarly proprietary) to the idea of the masculine art of barbecue in North America. Traditional Uzbek plov is made with lamb (or mutton), which necessitates a long simmering time before the rice is added, to ensure that the lamb is tender and the connective tissues have all melted into an unctuous, satisfying texture. However, you can also make it with beef, and increasingly it is being made with chicken, whose speedy cooking time means the dish is on the table much, much faster. It is also easy and delicious, which are the only reasons that you need, to decide to make it.
Chicken Plov
Serves 4
400 grams boneless skinless chicken
1 head garlic plus 2 cloves
1 medium onion, finely diced
1 large or 2 medium carrots, grated
2-3 bay leaves
1 teaspoon ground cumin
1 teaspoon ground coriander seed
pinch ground turmeric
1/2 teaspoon white pepper
1/2 teaspoon coarse salt (optional)
1 tablespoon olive oil
1 tablespoon duck fat (or more olive oil)
200 grams long grain rice
2 cups (500 ml) heated chicken broth or stock
1 - 2 tablespoons vodka
Finely chop the onion and 2 cloves of garlic. Slice the chicken (thigh is best, breast is also fine) into bite-sized chunks. Peel (if necessary) and grate the carrot coarsely. You could julienne the carrot if you prefer. Remove the outer layers of paper from the head of garlic, leaving the head whole, but the cloves still encased in one layer of skin. Use a very sharp knife to slice off the tip of the head of garlic, and set the whole head aside (tips can be added to the onions and chopped garlic).
In a medium-large pot or wok (the one I used is probably a little too big for this amount of food, and would have been perfect for a double recipe), heat the olive oil over a medium heat until just shimmering. Add a third of the chicken in a single layer, and let sizzle for 30 seconds or so before you stir through once, push the cooked pieces to the outside edge, and add the next third of the chicken. Continue until all the chicken has been lightly seared on at least one side, and remove to a holding plate.
Into the emptied pot, add the duck fat, the onions and minced garlic, and the salt (if your broth or stock is quite salty, you might want to omit the salt). Sauté until the onions start to change colour, and then add the carrots. Continue to sauté, and add the bay leaves, turmeric, white pepper, ground cumin and coriander. Stir and cook for a few minutes, until the carrots are wilting down nicely. Deglaze by adding the vodka to the pot, and scraping up any flavourful bits that might be stuck to the bottom.
Return the chicken to the pot, along with any juices that have accumulated on the holding plate. Pour the uncooked rice evenly over the chicken, smoothing it flat, and then gently pour the hot broth/stock/water over the rice, being careful not to disrupt the surface any more than is necessary. Smooth the rice a little again, if you need to.
Take the prepared head of garlic and plunge it cut-side down into the rice, leaving the root-end sticking up just a little. As soon as the liquid is starting to bubble a little, cover the pot with a tight-fitting lid, turn the heat to the lowest possible setting, and let cook undisturbed (no peeking!) for 17 minutes. When 17 minutes is up, still without lifting the lid/peeking, turn the heat off completely, and remove the pot to a resting place (a pot holder, or an unheated burner) for another 17 minutes. This time, when the 17 minutes is up, you are ready to serve.
You can upend it onto a fancy platter, or you can simply stir it through and spoon it into shallow bowls.It should be moist and fragrant, but not overly wet. Remove the garlic first, and squeeze the tender, fragrant cloves of garlic out of their skins by putting pressure around the base, scattering the cloves over the rice or dividing them amongst serving dishes. Some preparations call for a whole head of garlic per person being served, but I'll leave that up to your discretion. I've served it here with Ukrainian pickled tomatoes.
Leftovers reheat beautifully.

Ayam Pedas Asam - Indonesian Sour Spicy Chicken (and International Bento: Indonesian)
Although there is a version of this dish called Ayam Goreng Asam, Sour Fried Chicken, where the chicken is first fried in oil before the sauce is added to the pan, this one has zero added fat. This suggests to me that I can pair it with a richer side dish without the overall meal feeling heavy, but in this case I was in a hurry to use up some cauliflower, so I just roasted that with some curry powder (and a bit of oil) instead.
The butchers and supermarkets here don't offer boneless chicken thigh, for some reason, and it turns out I'm too lazy to bone them out myself, so I've made this with breast. Thigh would be juicier, of course, so if you can get it, go for it.
While this dish is essentially just a meat-and-gravy dish, I think that a bit of Asian eggplant would go beautifully with the other flavours here, so I may try that next time.
Ayam Pedas Asam
Serves 4
500 grams boneless chicken thigh or breast
2 lemongrass stalks
3 cloves garlic
1/3 cup tamarind concentrate (soaked, pulp squeezed & pureed, or prepared)
1/2 cup water
1 teaspoon kosher or coarse sea salt
2 teaspoons ground coriander seed
1/2 teaspoon turmeric
1 teaspoon palm sugar (or date sugar, or raw sugar)
1/2 teaspoon ground white pepper
3 star anise stars
3 Makrut lime leaves (fresh or frozen)
1-2 hot red chiles (such as Thai bird chiles), sliced or minced (or sambal oelek to taste)
Cut the chicken into large chunks, and set aside in a stain proof, non-reactive bowl.
Trim the ends of the lemongrass, and remove the outer tough layers. Slice one into thirds, and cut a vertical slit down to the core along their whole lengths,. Chop the other lemongrass up fairly finely, and put it in your blender or mortar.
If you are using a blender, add the garlic, salt, water, and sugar to the lemongrass, and blend until as smooth as possible. If you are using a mortar, grind the lemongrass with the salt. When mostly smooth, add the garlic, and continue until you have a smooth paste.
In a bowl, mix the lemongrass/garlic paste with the tamarind concentrate, coriander, turmeric, white pepper, chile(s), and anise stars. Scrape the mixture over the chicken, and stir well to thoroughly coat each piece. If you used the mortar method, add the water and sugar at this stage, too.
Let the chicken marinate for 20-30 minutes, or overnight, covered, in the fridge.
Place the chicken and marinade into a large skillet over medium heat, and add the lime leaves. Continue to heat until the liquid is quite bubbly, and then reduce the heat and let cook very gently, turning the chicken pieces occasionally, until cooked through, about 10-15 minutes.
If you still have a lot of liquid in the pan, remove the chicken pieces to a plate, and vigorously boil the sauce until it has thickened and reduced. Add the chicken pieces (and any accumulated liquid) back into the pan, turn the heat off, and gently stir around so that the thicker sauce now nicely coats each piece of chicken.
Serve over scented rice or basmati, with the vegetable side dish of your choice.

Roasted Chicken with Mandarins & Ouzo (Plus: International Bento: Jerusalem)
One of our Christmas gifts this year was the gorgeous cookbook Jerusalem by Yotam Ottolenghi and Sami Tamimi. I've been petting the pages for weeks now, but finally got it together to make something from it. This was a wow-factor recipe, turning simple chicken parts into a feast.
As I didn't have a lot of time to source Arak, the ingredient in the original recipe, I went with ouzo (mentioned as an acceptable substitute, and super cheap in these parts) and have zero regrets. I didn't have true clementines, but the Spanish mandarins were a bit tart, and a surprisingly good substitute.
I served this with an easy version of jewelled basmati rice - cooked basmati stirred through with butter, lemon juice, lemon zest, raisins, and a pinch of salt, and it played very nicely with the flavours of the main dish (and, mixed together the next day with some of the leftover fennel and orange slices (chopped up) it made a fantastic salad, too.
The original recipe calls for a whole, disjointed chicken, but I went with three whole chicken legs, and simply divided them into drumstick and thigh pieces.
Wonderfully, this dish can be prepped in advance, so you just need to tumble the marinated chicken into a prepared (ie. lightly oiled) roasting tray (a BIG one), and cram it into the oven.
Roasted Chicken with Clementines & Ouzo
Serves 3-4
100ml ouzo (or arak, per the original)
4 tablespoons olive oil
3 tablespoons freshly squeezed orange juice
3 tablespoons lemon juice
2 tablespoons grainy Dijon mustard
3 tablespoons raw sugar
2 fennel bulbs, trimmed (fronds reserved)
3 whole chicken legs, thighs and drumsticks separated
3 mandarin oranges, sliced (unpeeled) into thin rounds
1 tablespoon thyme leaves
2 1/2 teaspoons fennel seeds, half-crushed
salt and pepper
Fennel fronds, to garnish
Combine the ouzo, olive oil, orange juice (I just squeezed some of the extra mandarins), mustard, and sugar in a bowl, and mix well to combine.
Slice the fennel bulbs (each one into 8 wedges) and the mandarins, and place them in a big bowl with the chicken pieces. Pour the marinade over the chicken, fennel, and orange pieces, and then sprinkle with the crushed fennel and fresh thyme. Turn everything about to get it evenly coated, and then cover and let sit for a few hours (or overnight).
Preheat the oven to 400 F. Spread the chicken pieces (skin side up) and the fennel and oranges in a single layer in a large roasting pan. Pour the extra marinade evenly over the pan, then sprinkle the whole dish lightly with coarse sea salt (or kosher salt).
Bake for 45 minutes.
Remove the chicken and other solid items to a platter, and pour the juices from the tray into a saucepan or small skillet. Cook over high heat until the juices are reduced and become a syrupy textured pan sauce. Serve the chicken with the fennel and orange pieces onto individual plates, and drizzle with the pan sauce. Decorate with reserved fennel fronds, and a good grinding of black pepper. I served this with a slightly fancy rice, but a plain one would be beautiful, too. Couscous would probably also work very nicely.
Reheats wonderfully the next day (it's a good idea to remove any meat from the bones before putting leftovers away), as in this international bento below:

Cajun Chicken Fricassee
It's no secret that we love the food of New Orleans. Cajun and creole dishes are slowly but steadily seeping into our rotation, from the very first Jambalaya through Smoked Duck Étouffée, and of course further versions of Jambalaya, and all points in between, many of which I have yet to share with you.
The real trick is learning how to make a roux (some patience is required), and not balking at the amount of fat that goes into it. I do confess, though, that I often use less roux in my versions of recipes than is called for, to no discernible detriment to texture or flavour. Once you've got the roux down, the possibilities expand significantly. As an important public service announcement, I'm here to tell you that bacon fat makes a really delicious roux. So, if you like to save your bacon fat, this is a fantastic dish to squander it on.
This is a luxurious tasting dish, and seems more closely related to Étouffée than to its French cousin, also called Fricassee, a creamy, somewhat more subtle dish. Garnish with sliced green onions (not shown here) for maximum traditional bonus points.
Cajun Chicken Fricassee
Adapted from "Cajun — Creole Cooking" by Terry Thompson-Anderson
Serves 4 (with gravy leftover for another meal)
8 pieces of chicken (bone in, skin on, legs/thighs are optimal)
seasoned with salt, black pepper, and cayenne
1/2 cup cleaned bacon fat* or lard
1/2 cup all purpose flour
2 medium yellow onions, diced
3 stalks celery, sliced or diced
5 cloves garlic, finely chopped
3 bay leaves
1/2 teaspoon cayenne
1/2 teaspoon black pepper
1 teaspoon dried thyme leaf (less, if powdered)
OR 1 1/2 tablespoons fresh thyme leaves
3 cups hot chicken broth or stock
4 green onions, sliced (garnish)
*If you keep salvaged bacon fat in a jar in the fridge, it usually ends up with stria of little burned flecks and lumps. Once you have a full jar of fat, it's easy to warm up it up until it becomes liquid again, and the impurities settle to the bottom. Then you can carefully pour off what you need, leaving the nasty bits behind. (Pour any extra into a clean jar to store in the fridge until needed.)
Once you start cooking, you will have no time to prep. Therefore, prepare and measure out everything that you need in advance, including heating your stock. This is your only warning.
Season the chicken pieces on both sides with salt, pepper, and cayenne. Open a window, if possible, so that the smell of frying chicken does not haunt you for days.
In a large dutch oven, heat the fat until it is shimmering (but not smoking), and fry the chicken briefly until golden on both sides (but not cooked through). I work in batches, browning the thighs first, then the drumsticks, removing the pieces to a paper towel-lined plate as they are done.
When all the chicken has been browned, turn the heat down to medium-low and sprinkle the flour over the hot fat, and get right in there with a whisk to smooth it into a roux. Switch to a wooden spoon and stir, pretty much continuously, scraping the entire bottom surface of the pan to prevent catching and scorching, for about 25 minutes, or until the roux becomes caramel-coloured. If the roux is really catching on the bottom of the pan, turn the heat down further, or remove it from the heat altogether (for a few minutes). Using bacon fat instead of lard gives you a jump start on colour, but don't trim the time, as it is necessary to cook the flour through properly and develop the flavour.
Once the roux is caramel-coloured, add the onions, garlic, and celery, and cook and stir for about four minutes, or until the vegetables are wilted and the onions have turned translucent. The roux will thicken rather a lot as this happens, so constant stirring is necessary. Add the remaining dry seasonings - bay leaves, cayenne, black pepper, thyme - and stir them through.
Add the stock, slowly, stirring constantly, until it is all integrated, and the gravy is bubbling nicely. Return the chicken to the pot, stir through, and once the dish is gently bubbling, reduce the heat to the lowest setting, cover, and let cook for an hour. If you are anxious, you can peek at it now and then, and give it a little stir. No biggie.
In the meantime, while the fricassee cooks, you have a chance to clean up a little, and make any side dishes. Rice goes wonderfully, but so do noodles, mashed potatoes, biscuits, or dumplings. Your choice. Shown here is Cajun Spinach Rice (adapted from the same book), and Ukrainian pickled tomatoes (because they are delicious).
When the hour is up, stir the dish through (there may be some chicken fat settling out on the surface, just stir it back in), and garnish with sliced green onion.
This recipe makes a lot of gravy, so after dinner I set aside the extra in a freezer container, ready to become a fast weeknight dinner by adding boneless chicken breast, and serving over biscuits, with some sort of extra vegetable on the side.
