Azifa - Ethiopian Lentil Salad

Last year, I was surprised and irritated to discover one of my photos (from the era before I labeled them) was being reproduced all around the internet. Half of my irritation was at the (uncredited) misappropriation of my photo, and half was that it was being wrongly used - it wasn't Azifa at all. The photo had been taken from my old website (linked here)(Update: link has now expired, but you can find the original recipes in the comments below); there are two recipes on the original page - one for the delicious Ethiopian lentil salad called Azifa, and the other was an also fabulous Turkish lentil salad (which I believe translates as yeşil mercimek salatasi). There was only one photo, though: the Turkish salad. The photo had been mercilessly hijacked and propagated with the wrong recipe attached (or versions thereof). I figured the tomatoes in the original photo would be a dead giveaway as to which salad was pictured, but no - it turned up on a number of recipe collection sites and even once on the menu of an Ethiopian restaurant. To the best of my knowledge, those copies have now been taken down.

So now, years after posting the original article on two versions of a green lentil salad, and while I'm in a sort of mood of re-addressing old favourites, I thought I would finally give Azifa a photograph of its own. It may not be the prettiest or most colourful salad, but it is delicious! Do check out the comments of this post for the recipe - it's a fine summer dish, especially with a glass of crisp white wine, or a hoppy IPA. It also packs well for lunches (and bento!) and makes a great pita stuffer, but it also pairs beautifully with grilled salmon, or lemony yassa.

Sesame Peanut Noodles


I've made this dish before. I've even posted about it before (see post). Hmmm, that must mean that it's actually summer, not that you can tell from the weather. Still, this salad is delicious no matter what the weather.

This is a Nigella recipe, and it really only needs minor tweaks to suit my needs. You can see the official version of the recipe here, and my version below.

The first time I made this dish, I added some chicken to round it out as a meal, but in all honesty, it doesn't need anything added to it. It does make a lovely side dish, though, so if you've got a few skewers of shrimp on the grill and you're looking for a low-maintenance make-ahead side, this is definitely a great place to start.

Sesame Peanut Noodles
Adapted from Nigella Express, by Nigella Lawson

Dressing
1 tablespoon sesame oil
1 tablespoon olive oil
2 cloves garlic, crushed
1 tablespoon low sodium soy sauce
2 tablespoons sambal oelek (or sriracha)
100 grams smooth peanut butter
2 tablespoons fresh lime juice
2 teaspoons honey (use agave syrup for vegan)

Salad
125 grams snow peas, sliced thinly, diagonally
1 red pepper, julienned
125 grams zucchini, julienned
2 green onions, finely sliced
500 grams Chinese-style steam noodles

Garnish
Toasted sesame seeds
Cilantro

Directions are almost superfluous, here. Slice the vegetables, cook the noodles, and drain them, shocking them with cold water to stop the cooking process. Combine the dressing ingredients and beat until smooth, and then toss the noodles, the vegetables, and the dressing together.

You can vary the vegetables, of course. I replaced the bean sprouts in the original with julienned zucchini, and now I can't imagine making it any other way. Using a variety of peppers might add an extra splash of colour, too - combine red, yellow, and orange pepper strips for a little extra visual punch. Radish or jicama strips might also go nicely in here.

Having made this a couple of times, it should be said that you simply must use your hands to effectively combine everything. in the final assembly stage, otherwise, no matter how big your bowl and how dextrous your fork-handling, you will not get the dressing and vegetables properly integrated throughout the noodles. With fingers, though - quick business.

Another note is regarding peanut butter: use the very best tasting peanut butter, please. This is not the way to use up what my family calls "dried up wrinkly old" peanut butter, aka the desiccated natural peanut butter in the bottom of the jar, which I did in my last posting of this recipe. I'm currently raving about Nuts to You smooth organic peanut butter, which is by far the best I've ever tasted (plus, it has an awesome ingredient list: peanuts). Everything I make with that peanut butter is somehow amazing!

The salad travels well for lunches, too, although it seems to like a little extra soy sauce to perk it up a bit.

Summer Fruit Salad


I adore fruit salad.

That is, I love fresh fruit. Fruit salad, as found in restaurants (often under the name "fruit cup" or simply arriving unannounced on the side of your brunch) is often lacking. The most heinous of the many crimes against fruit salad are as follows: too much filler (melon, canned pineapple, citrus sections from a tub), cut too long in advance (I'm pretty sure I've had some that were cut days before they got to me), fruits that don't complement each other (apples mixed in with soft stone fruits), the poorly cut (giant hunks of one fruit, tiny slivers of another) and, finally, what I think of as "interference" - some sort of nasty syrup poured over all as a "dressing".

Fruit salad is not difficult, and in the summer it need not be expensive. I eat fresh fruit year-round, when I can, and I therefore end up eating fairly seasonally, although I confess to occasionally succumbing to raspberries grown in Mexico in the dead of winter. In summer in Vancouver, there are explosions of local berries to choose from, and gorgeous stone fruits from the Okanagan. An embarrassment of riches, really.

While I'm not a hardened locavore (we don't grow papaya or mango around here), I do like to purchase the local version of those fruits that do well in our climate. The salad above contains local organic strawberries and blueberries, as well as papaya (not so local). I thought the combination of colours was pretty, and I find that generally three well-chosen fruits together make a very nice balance. I dressed it the way I dress most fruit salads (the non-dessert-y ones, anyway), which was simply with freshly squeezed lime juice. That's all you need, really, for most fruits.

This salad was made for a friend's bbq afternoon, and I was tickled pink when our host told me that it was the first time anyone had ever brought a fruit salad that wasn't full of things he hated. Perhaps that was luck, but I suspect it's because I didn't go the cheap filler route.

Now, before you think that I'm some crazed melon-hater, I should tell you that I rather like melon. We don't have it in the house due to allergy issues, but I have nothing against fresh melon, in season. I tend to prefer it on its own, but I've had melon-ball salads that were all different kinds of melon, and were absolutely delicious - but that's because it was someone using melon specifically to execute a particular effect, and not simply as coarsely-cut filler to reduce expenses. I also like fresh pineapple - one of my go-to fruit salads is the trio of fresh pineapple (diced small), kiwi, and blueberries - all drizzled with lime juice, naturally. Such a pretty combination of colours, with the green, yellow and blue. So delicious!

Getting back to restaurants, though, I know that one of the problems is that of suppliers. If you want the favourable, stable pricing from your supplier, you need to arrange a full-year gig, not just getting fruit in when it's not in season in your own backyard. This is why you can get limp, colourless tomato slices on your burger at the height of rioting tomato season. It's a tragic pay off, really.

So, in the summer, I eat a lot of fruit. I take fruit salads to work for my lunch as often as I can, and I take great delight in trying different flavours and combinations. It's pretty low effort for most fruit - maybe a bit of peeling and chopping, but for five or ten minutes' work, you get a splendid salad that cheers you right up at lunch time.

Salad Tweaking (Pasta Salad Primavera)

If you have check out my Reviews blog, Much Ado About Diet, you'll see the test recipe for Dilled Pasta Salad with Spring Vegetables from the newly released Mayo Clinic Diet & Journal. As noted, we like all of the ingredients, and so we enjoyed the salad, but we also identified some issues for this recipe in terms of its end result on the plate, as well as the overall health scorecard. So I decided to give it a little salad makeover.


Right away, we were surprised by the amount of oil in the original dressing recipe. 1/4 cup seemed rather high for the amount of salad to be dressed and, in fact, it delivered an uncomfortably oily result. In the revised recipe below, we cut the amount of fat in half, using only two tablespoons of olive oil. That took care of the excessive greasiness, and still easily provided enough dressing to adequately season the salad.

The second thing we noted was that the use of both asparagus and green bell pepper gave an overall bitter quality to the entire salad, not to mention contributing to a rather monotone appearance. The few cherry tomatoes did break up the green and white pasta-scape, but left me thinking that the whole dish could benefit from more colour, and more natural vegetable sweetness. I switched out the green pepper for orange and red bell peppers, which are much sweeter and do not have that unripe bitter quality of the green.


I also felt that the amount of pasta could really support a much greater quantity of vegetable matter, allowing for larger portions that really only increased the fresh vegetable intake of any serving. More vegetables is generally considered an improvement, health-wise, so I increased all of the feature vegetables: 2 more asparagus stalks, an extra half bell pepper, extra tomatoes (the exact number is going to depend on the size of tomato you choose).

Finally, I thought the amount of fresh herb could use a boost, so I roughly doubled the chopped herbs. In the second iteration, I used tarragon instead of dill, but that was simply because I had it handy, and it plays well with the same vegetables.

I think the final salad was more visually appealing (the change of noodle was strictly due to availability at the time) with lots of colours and a nice balance between the astringent asparagus, the sweet peppers, and the acidity of the tomatoes. The flavours were bright, the pasta tasted seasoned, but not greasy, and this recipe has earned a place in my spring and summer repertoire. It's versatile, vegan, stores well in the fridge for a day or two, and is about perfect for potlucks or picnics.

Pasta Salad Primavera
adapted from The Mayo Clinic Diet & Journal
Serves 4

3 cups uncooked short pasta, such as rotini
10 asparagus stalks
1 orange bell pepper
1/2 red bell pepper
2 green onions
10 - 12 cocktail tomatoes

Dressing
2 Tablespoons fresh lemon juice
2 Tablespoons rice vinegar (or white balsamic vinegar)
2 Tablespoons olive oil
large pinch kosher salt
black pepper to taste
1/2 cup fresh green herbs of your choice (e.g. tarragon, dill, basil, or parsley)

Trim the asparagus and slice into approximately two-centimeter chunks. Dice the peppers into medium-small dice. FInely slice the green onions. Cut the tomatoes as needed - quarters for strawberry tomatoes, halves for cherry tomatoes, and whole for grape.

Stir the dressing together while the pasta boils.

Drop the pasta into boiling, lightly salted water and cook until just tender. For the last two minutes of cooking time, add the asparagus to the pot of boiling pasta. When finished, drain and plunge the pasta and asparagus into ice water to stop the cooking process and cool it down. Rinse with fresh, cold water until all the pasta is cool to the touch. Drain well, shaking to get rid of any excess water.

In a large serving bowl, combine the chopped raw vegetables and dressing. Add the well-drained pasta and asparagus and toss so that the dressing gets evenly distributed. Serve right away, or chill until needed.

Potato & Radish Salad with Dill


A last little taste of Summer. Is it too late to still be talking potato salad? This one is pretty basic - steamed, halved nugget potatoes and sliced raw radishes, tossed with a mountain of fresh dill and a little good quality mayonnaise mixed with sliced green onion and a tiny amount of crushed garlic. The ideal side dish for getting one last barbeque or picnic in, even if it's technically autumn already.

I didn't follow a recipe for this, I just eyeballed the ingredients, going easy on the mayo (you can always add more). Sadly, I failed to take the photo before we had dinner, and this technically was just the leftovers (perfect lunch for the next day!), but it was a beautiful, big heaping bowl of delicious salad, and I kind of want some right now.

Mexican Chickpea Salad

It may not seem like salad weather to everyone out there, with the sudden, aggressive return of sub-zero temperatures. The poor cherry trees are obviously trying to be on time with the pink blossoms, but winter's grim determination to keep a grip on us is thwarting their best efforts.

However, this may be when we need salad the most - especially those of us who recently returned from sunnier climes, and can hardly believe the rude shock of snow on the ground in March, for crying out loud. Best of all, this salad gives double value with the freshness of the spinach and the heartiness of the chickpeas, making it a good transitional salad/side dish for, oh say, a lovely achiote-rubbed pork tenderloin (which I failed to photograph, sorry).

This recipe was engineered by Palle, who has been researching traditional Yucatecan food since we returned from Mexico. Some tweaks and substitutions were necessary - for example, classically the salad would be made with chaya, an indigenous Mexican plant that is used for everything from stuffing chicken to being pureed into a sweet, lime-juice based cold beverage. Without access to chaya, he opted for baby spinach. I note that apparently chaya is toxic when raw, so I imagine that this recipe would be made with chaya leaves that had been simmered properly, first. Not under that restriction, we went with raw for the spinach.

Mexican Chickpea Salad

19 ounce can chickpeas, drained and rinsed
2 tablespoons chopped fresh cilantro
¼ cup diced red onion

Dressing #1
2 tablespoons olive oil
2 tablespoons fresh lime juice
¼ teaspoon finely grated lime zest
¾ teaspoon ground cumin
pinch of cayenne (or other hot) pepper
salt and freshly ground black pepper to taste
4 cups baby spinach leaves (or prepared chaya, if available)

Dressing #2:
3 tablespoons plain yogurt
1 tablespoons fresh lime juice
½ teaspoon finely grated lime zest
¼ teaspoon honey

In a medium bowl, combine chickpeas, cilantro and onion.

In a small bowl, whisk together the oil, lime juice and zest, cumin, cayenne, salt and black pepper. Pour the dressing over the chickpea mixture and toss to coat evenly.

In another small bowl, stir together the yogurt, lime juice and zest, and honey.

Serve the chickpea salad over a bed of spinach leaves. Top with a drizzle of the yogurt dressing.

I'm pleased to report that any leftovers can be mixed all together and are equally delicious the next day. Also worth noting, the yogurt dressing on its own would make a delicious veggie dip, or even as a drizzle for kebabs, or in a nice pita sandwich stuffed with grilled things.

Salad Days Are Here Again (Sesame Peanut Noodles)

I love interesting salads, and summer seems to be the time when they really come out to play. I've made much of lentil salads, and couscous or quinoa salads, and of course the ever-beloved potato salads and pasta salads.

Sometimes a salad is really all you want for dinner, on hot, summer days, something light and refreshing and vegetably. There's a lot of ways to get your fix. Greek and Turkish chopped salads are always a good side dish for food cooked on the grill, or to add a civilized touch to a burger feast. The ingredients generally vary from cook to cook, based on individual preferences, and once you find the ways that speak to you, they become ingrained. It can be a challenge, sometimes, to accept someone else's version of something you love, but that's a whole different story.

The salad above is the Sesame Peanut Noodles from Nigella Express, from which I have already made a number of recipes, generally to good effect. This was no exception.

I had to fiddle a couple of things, because my peanut butter was a little on the dried-out side, so I needed to add a little more oil and a little warm water to sufficiently lubricate the ingredients into a sauce consistency. I also don't stock sweet chili sauce, so I simply used sambal oelek and a tiny drop of honey to balance its heat.

I also didn't blanche the vegetables, which may or may not have made a huge difference - I may try it that way next time, just to see what difference it really makes, but at the time I just wanted to get on with things. I did slice the peas, though, because I thought they would integrate better that way; I think I was right. I used fresh steam noodles from the grocer's, and cooked them as directed, since the already-cooked noodles looked a little too oily, for my tastes, and it worked just fine.

Finally, and you won't see it in the picture, because the photo is of the stash relegated to the fridge (it does indeed make rather a lot of food, this recipe) and I wanted it to be available for the vegetarian staying with us, I added some sliced chicken from a chicken breast that I quickly sauteed while everything else was going on. The chicken was a definite hit, and made the dish very much into a suppery sort of affair. I would do that again in a heartbeat, because I love the way the chicken soaks in the sauce, and the combination of the bright lime juice and vegetable flavours against the sultry back notes of toasted sesame oil and peanut.

The leftovers were lovely to take to work the following day, as promised. This is one for my permanent summer salad rotation. Joy!

Quinoa!

I know that I am only the most recent in an awfully long line of people to discover quinoa, but I'm really quite excited about it! It is a grain that I have heard about for years, but never really gotten around to trying. Occasionally I would see it on a menu, but it somehow never managed to be paired with whatever I was in the mood for, or there was an ingredient listed that I didn't care for. In my quest for new side dishes and new salads - always a favourite hunt for the summer picnic table - and with my current trend away from most forms of refined flours and sugars, I decided that I needed to explore some of the alternative grains and seeds whose names were floating around in the back of my head.

I went hunting online for recipes, and there were certainly plenty to choose from! Quinoa as breakfast (in hot-cereal mode), quinoa as pilaf, quinoa as salad, and quinoa as curry, just to name a few. While the curry idea definitely piqued my interest, I thought that perhaps I should start off a little on the safe side, and simply substitute the main component in an already-popular salad (in our house, anyway), with quinoa.

This recipe for Couscous Salad is an outgrowth of Middle-Eastern tabbouleh, a parsley-rich dish usually made with bulgar wheat, and seasoned generously with lemon juice to give it some zing. While I am a big fan of tabblouleh, as well, I developed this recipe initially with couscous to speed up the prep time, provide a softer texture, and incorporate more vegetables. Changing back to a grain (quinoa - technically a seed, in fact) from a pasta (couscous) improves the nutritonal profile pretty tremendously, but mostly because, as it turns out, quinoa is a nutritional powerhouse! Not only is it protein-rich (although I include a little feta in my salad, which adds to the protein, also), but quinoa is also a good source of amino acids, dietary fibre, magnesium, iron, and is gluten-free.

My biggest hesitation, standing in front of the bulk-foods cannister, staring at the organic quinoa in front of me, was that I didn't have a clue how to cook it. A little online research solved that problem, too. It turns out, quinoa cooks a lot like white rice. So, with a shrug and a smile, I popped my well-rinsed purchase into the rice-cooker (a Tiger, if it makes a difference) with the same ratio of water as for basmati rice (my standard, go-to rice), set the program for "quick" white rice - laughably, about 40 minutes instead of the "usual" 48 minutes - to skip the initial soaking period that I wasn't sure was necessary for quinoa, and waited.

The quinoa cooked up just as I had hoped. Fluffy, tender, with its little spiral of bran arching delicately away from each grain. The flavour, since I couldn't resist trying it straight up, was nutty and complex, and unlike anything else I have ever had. It had a familiar-tasting quality that I am still trying to identify, but was wholly new-tasting at the same time. Still, it was very much a base-flavour, and it took in the seasoning that I usually put in the Couscous Salad beautifully.

I'm looking forward to trying other grains and seeds - perhaps amaranth will be next - but I'm also quite excited to try a curried quinoa dish - either as a hot side or a cold salad. And, of course, hot, plain quinoa would be a fabulous base for a wonderful vegetarian curry, all chock full of farmers' market-fresh goodness.

Funny Little Salad

I have always liked salads that had a little more to them than the standard lettuces, and I'm particuarly amused by salads that have no leafy greens whatsoever. Greek salad, to me, is a hoot. You see, salad when I was growing up was such a leafy affair, that other kinds of salad, fancy kinds of salad, would have to have a disclaimer in order to qualify for the genre. Spinach salad, fruit salad, bean salad...these were all nifty, but decidedly off the radar as simply salad.

This particular salad is a peculiar take-off on the Waldorf (which my brother once called "Uppity Coleslaw"). In his honour, I think I shall call this Uppity Salad, and just leave it at that. Its antecedents lie in the Australian Women's Weekly Fruits & Vegetables Cookbook, but I've messed it about somewhat. It came about when I realized that I had most of the ingredients to make it, several of which were in dire need of using.

One of the glorious thing about salads, aside from the fact that you can vary them so much, is that you can really tinker about with the proportions of each item, as you see fit, with minimal ramifications. This is more or less what is needed:

Uppity Salad

2 stalks of celery, somewhat-finely diced
4 slices of bacon, fried crisp, drained and crumbled
1 banana, sliced or diced (sliced looks prettier, but I was on a roll with the dicing)
1 apple, somewhat-finely diced
2 - 3 tablespoons finely minced onion or sliced green onions
1 handful of pecans or walnuts, toasted if possible
1 lime - juice and zest
1/4 cup plain yoghurt, full fat (Mediterranean style is good here)
1 tablespoon mayonnaise
2 tablespoons fresh cilantro, chopped

Mix the lime juice and zest with the yoghurt and mayonnaise and blend thoroughly. Toss in the rest of the ingredients, adding the bacon last. garnish with cilantro, if you like. Stir gently to coat. For a truly uppity presentation, serve it in a cocktail glass, but a lettuce leaf or obligingly shaped piece of kale will suffice to lift and separate it from other items on a plate.

Serves 2 generously.

It doesn't keep terribly well, as the banana goes a bit soft the next day, so do eat it all at once. In fact, it's hard to resist licking the bowl. It may seem like an odd combination, but the saltiness of the bacon, the soft sweetness of the banana, the two distinctly different crunches of celery and walnut and the zing of lime actually sing a pretty good harmony.

Summer Salad

Summer is indisputably salad-time. Appetites are a little supressed from the heat, and an abundance of fresh fruit, vegetables, and herbs cry out for use. Not only are our appetites a little down - we still get hungry, but seem to fill up faster - but our desire to do much work in the kitchen (or out of it) also fades. Fortunately, the summer salad is a perfect opportunity for some easy, make-head, delicious dinner options.

You could serve this as a side dish, and I often have, or take it as a potluck item that will stand out beside other pasta salads, or indeed, hold its own against many a main course, or you can cram it into pita for a quick bite on the go. Sometimes, if I'm really feeling worn out, I'll just sit down to a bowl of this in front of the television and let my brain turn criticizing advertisements, or snarking at the shows on FoodTV.

It keeps really well in a sealed, tupperware-type container, for about a week. Doubtless, you will have eaten it all up long before then. As an added bonus, this dish has under 30% of its calories from fat, so it's fairly healthy, too. The use of low GI ingredients (chickpeas and lemon juice) mean that it's value on the glycemic index is probably quite low - which means that it will fill you up without wreaking havoc on your glucose levels.

Chickpea & Orzo Salad
(adapted from Cooking Light's Simple Summer Suppers)

1 cup uncooked orzo
3/4 cup sliced green onions
1/2 cup crumbled feta
1/4 cup chopped fresh dill
1 19 oz. can Chickpeas (garbanzo beans) - drained
zest and juice of one lemon
1 1/2 tablespoons extra-virgin olive oil
1 tablespoon cold water
1/2 teaspoon kosher salt
1 - 2 cloves minced fresh garlic

Cook orzo until done in lightly salted water - about five minutes. Take care not to overcook, as you don't want the pasta to become mushy. Al dente is the goal. Drain, and rinse with cold water. Drain thoroughly, and place in large bowl. Add drained chickpeas, green onions, dill, lemon zest and feta to the bowl of pasta, and toss gently to distribute evenly. Combine juice, water, garlic, salt, and olive oil, and stir well. Pour dressing over the salad, folding the ingredients gently so to coat everything thoroughly.

Try not to eat it all before it makes it into the fridge. You can serve it right away, but it's terrific very cold from the fridge - especially with a nice glass of crisp white wine.

Natural Match

Sometimes, I read a recipe that is very different than anything I've tried before, but while I am reading it, I find myself nodding and thinking to myself that this is such a natural match, these things go together so well, that I am surprised I've never thought of it myself. This happened immediately upon seeing this post by Michele at Oswego Tea, where some of the ideals of a Greek salad (long a favourite) have migrated into zucchiniville.

Fortunately, I do not really expect to come up with every brilliant food combination myself, but I'd be a sad sort of food enthusiast if I didn't recognise a good thing when I stumble across it. Still, it took a couple of weeks before the combined hot weather, hunger, and the presence of artisanal goat feta in my fridge prompted me to drag out the indoor grill for the season.

The salad is exactly what I hoped it to be: cool, tangy with feta and lemon juice, fragrant with mint, and slightly softened (but still crunchy) vegetables with lovely dark marks from the grill. It is a refreshing side dish for dinner, or even possibly a light meal by itself. It is the perfect thing to help beat the heat, especially in an old house that doesn't have great ventilation and needs all the help it can get to stay cool.

I will be making this many more times this summer...and in the summers to come.

Salad days, ahead of schedule

You can tell that Spring is finally here (apologies to those suffering under the blizzard in southern Ontario) for a whole host of reasons: half of the town have tucked away their leather coats into closets, brighter shades of green and pink and yellow (it's the new orange!) are showing up, the young, nattily-dressed men on the #22 bus into downtown have shaved their heads, and I'm making salad.

I'm very fond of salads, actually. My mother favoured huge leafy salads that she constructed individually right on each dinner plate (and covering at least half the plate, maybe more) in the summer, and cole slaw in the winter. It wasn't until I left home that I encountered things like tabbouleh, rice salads, lentil salads, pasta salads. I took to them rather fiercely.

After my lamby foray into Turkish and middle eastern cuisine this weekend (yesterday I experimented deliciously with baked falafel) I find myself with an interesting assortment of leftovers, which, individually do not constitute a meal, but together, and augmented a tad, will do just fine. Leftover slices of roast lamb with cacik and olives (!) and a few sliced tomatoes, feta and cucumbers can make very satisfactory sandwiches, stuffed into pita bread, as will the falafel. What I really needed to go with it was a salad.

The Shephard's Salad that went with the original lamb dinner was rather fun. Much like a Greek salad in that it consists primarily of chopped tomatoes, cucumber, and green peppers (and even more so since I added some cubed feta) it also featured lettuce (not to be found on any self-respecting Greek salad, thank you very much Eastern Coast!) sliced radishes, and was dressed with a combination of fresh lemon juice, olive oil, fresh sliced mint leaves and the all-important sumac, a woodsy-lemony flavoured spice. It was quite delicious, but having had it two days in a row, I am sort of looking for something else.

Lentil salad it is. There is, as it turns out, a Turkish version of green lentil salad lurking in the pages of The Sultan's Kitchen: a Turkish Cookbook. It is both similar to and quite different from the Ethiopian recipe "Azifa" that I like to make in the summer, being a combination of cooked, chilled green/brown lentils dressed with finely chopped vegetables and a simple vinaigrette. Whereas the African recipe has hot peppers, mustard, and red wine vinegar as its distinctive ingredients, the Turkish version is mellower, featuring more chopped mint, cilantro, sumac, and fresh lemon juice.

Lentil salads keep very well for a couple of days in the fridge, and lend themselves well to packed lunches - whether or not you have refrigeration available. They are also a fantastic source of both protien and vitamin-rich vegetables, and if you have a conservative hand with the olive oil, they can be healthily lean, too. In the summer, they are a favourite accompaniment (second, perhaps only to couscous salad) to grilled lamb burgers. Really, they make a great, easy side dish at any time, and I'm really looking forward to it tonight.
