One responded their lye water was 40% and another reported 30/70 solutes to solution which I calculated was around 42%. I then calculated how much lye was in 1 tbsp (between 5.5-6gms). I had seen in a couple places that the lye solution for bagels was 0.3% so dividing 6gms by 0.003 you get 2000 gms. At the moment, I've been making them with baking soda and malt syrup, but it's not the same. Unfortunately, none of the bottled lye waters sold in Asia have a solution concentration so I do not know how much to add to the water for boiling the bagels.
