I mentioned it to my husband on the weekend, and when he decided it sounded tasty, I had to try it.<br /><br />I got home early today, so I sliced the sweet potatoes into 1-1/2" chunks then roasted them with the peel on (along with the chicken, bone in) at 375F for about 45 min.
